The Snake Bite Cake

This cake was inspired by the oh-so-tasty cocktail concoction of lager and cider known as a "snakebite". For the cake, I've replaced the lager with a stout, and have opted for fermented pear cider in place of the more traditional apple. The slightly effervescent pear cider-cream cheese frosting swoons contentedly upon a truly dark, rich, and delicious chocolate stout cake. I think you'll like it.

Step-by-step

  • Preheat the oven to 350° F. Butter and flour a 9-inch round cake pan.
  • Mix together the flour, sugar, cocoa powder, baking soda, and salt in a small bowl.
  • In a large bowl, whisk together the eggs and sour cream. Then whisk in the melted butter and Guinness. Add flour mixture to egg mixture and combine with a rubber spatula.
  • Pour into the prepared cake pan and bake for 35 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  • While the cake is baking, prepare the frosting. Put the softened butter and cream cheese in the bowl of an electric mixer fitted with the paddle attachment and beat on medium speed until creamy and well combined, about 2 minutes.
  • Reduce the speed to low and add the powdered sugar, mixing until combined.
  • Slowly pour in the pear cider and mix until the frosting comes together.
  • Let the frosting set up a bit in the refrigerator until the cake is ready.
  • When the cake is cool, transfer it to a platter. Spread the frosting on top of the cake, taking care to push it all the way to the edges.
  • Garnish with a slice of dried pear, if you wish, and enjoy with a glass of pear cider!

The Snake Bite Cake: A Dark and Delicious Treat

As a busy working mom, time in the kitchen is a precious commodity. I need recipes that are both delicious and efficient, and this Snake Bite Cake absolutely fits the bill. Inspired by the classic "snakebite" cocktail—a surprisingly delightful mix of lager and cider—this cake offers a sophisticated twist on traditional chocolate cake. The deep, rich flavor of the stout cake is beautifully complemented by the light and tangy pear cider frosting. It’s the perfect dessert for a busy weeknight or a special occasion, equally satisfying whether enjoyed with a cup of coffee or a glass of pear cider.

The beauty of this recipe lies in its simplicity. The ingredients are readily available, and the process is straightforward, even for a novice baker. The stout adds a depth of flavor that elevates the cake beyond the ordinary, while the pear cider frosting provides a delightful counterpoint to the rich chocolate. I’ve found that using a good quality cocoa powder and stout makes a significant difference in the final product. Don't be afraid to experiment with different types of pear cider; the subtle variations in sweetness and tartness can add an interesting dimension to the cake.

Beyond its ease of preparation, this cake is wonderfully versatile. It's easily adaptable to dietary restrictions; for example, a gluten-free flour blend could be used to make it suitable for those with gluten sensitivities. It also stores well, making it ideal for baking ahead of time for parties or gatherings. The elegant presentation, with its dark chocolate cake and creamy frosting, always impresses guests, leaving them wanting more.

One of my favorite things about this recipe is its ability to transport me. The aroma of baking chocolate and the tart sweetness of the pear cider evoke feelings of comfort and warmth, reminding me of cozy evenings spent with family and friends. It's more than just a cake; it's an experience, a small indulgence that allows me to escape the daily grind and savor a moment of pure joy. I love the surprise element it brings - the unexpected combination of stout and pear is a conversation starter, prompting curiosity and delighted exclamations. It's the perfect recipe for anyone looking to add a touch of sophistication and excitement to their baking repertoire.

The Snake Bite Cake has become a staple in my home, a dessert that’s equally appreciated by my family and friends. It’s a recipe I’m proud to share, and I can’t wait to see what you think. Enjoy!
