Step-by-step

  • Brown roast well in oil.
  • Season.
  • Place rack in bottom of cooker, add meat, and bring pressure up to 15 pounds (or high).
  • Turn heat to low (or enough to keep the pressure up) and begin timing.
  • When time is up, bring pressure down by putting the cooker in the sink and running cold water over it to cool.
  • Allow steam to escape and check for doneness.
  • If not tender enough, bring back up to pressure and cook 15-20 minutes longer. Check again.
  • When done, remove from pan, place on a platter, cover, and let rest.
  • Cut potatoes into halves or quarters depending on size. (Too small, and they overcook and turn to mush.)
  • Place potatoes in the pan on the rack.
  • Cut an X on the root end of the onion to keep it from coming apart. The onion should be a little bigger than the potatoes or it will turn to mush before the potatoes are done.
  • You can add carrots, but again, if they are small, they will overcook.
  • Season vegetables and bring pressure up again and time for about 10 minutes.
  • Bring pressure down and remove vegetables to a serving bowl.
  • Use the juices in the pan to make gravy.
