Step-by-step

  • Add all of your meatloaf ingredients in a bowl and mix it together with your hands.
  • In a separate bowl, mix together the red topping sauce ingredients. Make sure you mix this thoroughly so that all the brown sugar incorporates into the rest of the ingredients.
  • Press the Sauté button on the pressure cooker to heat it up. After a minute or two add about 2 tablespoons of olive oil. Then add your potatoes and carrots (I used about 10 small potatoes cut into quarters and one small bag of carrots) with a little bit of salt and pepper. Allow these to cook about 5 minutes.
  • Now add about 1 cup of beef broth and turn the pressure cooker off for a minute.
  • I used a vegetable steamer rack to place my meatloaf on in between the potatoes and carrots. You can use tin foil if you don't have a steamer rack.
  • Spread about half of the red topping sauce on top of the meatloaf before you cook it and reserve the other half for after it's done.
  • It was important to shape it in the size of the pressure cooker with a little bit of room on the sides.
  • Now turn on the manual button and add 25 minutes so this will steam on high. Be sure your vent is set to seal on top of the machine. When the timer is up you can do a quick release of the steam button.
  • After all the steam has released, carefully remove the lid and check to make sure your meatloaf is done.
  • Add the remaining sauce to the top of the meatloaf and then I place it on a baking sheet and broil it for about 5 minutes.

My Pressure Cooker Meatloaf Adventure: A Weeknight Winner

As a busy working mom, time is my most precious commodity. Dinner preparation often feels like a race against the clock, a frantic dash between school pick-ups, work deadlines, and the never-ending cycle of laundry and homework. So, when I stumbled upon this pressure cooker meatloaf recipe, I was skeptical, but also desperate for a quick, delicious, and family-friendly meal that didn't involve endless chopping and hours of oven time. Let me tell you, this recipe became an instant lifesaver!

The beauty of this recipe lies not just in its speed but also in its versatility. I've adapted it countless times, adding different vegetables to the base, experimenting with various herbs and spices, and even substituting ground turkey or chicken for the beef. The core ingredients – the simple, yet satisfying combination of ground meat, breadcrumbs, eggs, and a tangy tomato-based sauce – remain the same, delivering a consistently moist and flavorful meatloaf every single time. The pressure cooker itself works magic; the meat is cooked perfectly, the vegetables are tender-crisp, and cleanup is a breeze. It's the kind of recipe that makes you feel like a culinary superhero, effortlessly whipping up a hearty and impressive meal with minimal effort.

One of my favorite things about this recipe is the way it allows for improvisation. If I have leftover roasted vegetables, I'll often incorporate them into the meatloaf mixture. A handful of finely chopped mushrooms or bell peppers adds a wonderful textural element and a burst of freshness. Similarly, I'll swap out the breadcrumbs for crushed crackers or even crushed tortilla chips for a Southwestern twist. The red topping sauce, a simple blend of ketchup, brown sugar, and mustard, can be customized to your liking as well. Feel free to add a dash of Worcestershire sauce, a pinch of chili powder, or even a splash of your favorite hot sauce for a little extra kick.

The pressure cooker not only speeds up the cooking process but also enhances the flavors. The moist heat locks in the juices, resulting in a tender and juicy meatloaf that's far superior to anything I've ever baked in a conventional oven. And the best part? The cleanup is incredibly easy. A quick wipe-down of the pressure cooker is all it takes, leaving me with more time to spend with my family instead of scrubbing pots and pans.

Beyond the efficiency and deliciousness, this recipe is a testament to the power of simple ingredients combined with a little bit of culinary creativity. It's a recipe that empowers me, a busy working mom, to create something truly special for my loved ones without sacrificing my sanity or my precious time. It’s a weeknight warrior, a recipe that has earned its place in our family's regular dinner rotation. Try it out – you won't regret it!

Tips and Variations:

  • For a spicier meatloaf, add a pinch of cayenne pepper or a few dashes of your favorite hot sauce to the meatloaf mixture.
  • Experiment with different types of ground meat. Ground turkey or chicken works well as a leaner alternative to beef.
  • Add some finely chopped vegetables to the meatloaf mixture for extra nutrients and flavor. Mushrooms, onions, and bell peppers are all excellent choices.
  • Use different types of breadcrumbs, such as panko or Italian-style breadcrumbs, for a different texture.
  • If you don't have a steamer rack, you can use a piece of aluminum foil to create a makeshift rack.
  • For a richer flavor, brown the ground meat in a skillet before adding it to the pressure cooker.
  • Don't be afraid to experiment with different herbs and spices to customize the flavor to your taste.
