Step-by-step

  • Preheat oven to 375°F.
  • Set 12-inch skillet over medium heat.
  • Add oil.
  • Add onion and peppers and heat for about 3-5 minutes.
  • Add in garlic and cook for an additional 3-5 minutes.
  • Add the pulled pork and stir well.
  • Add paprika, salt, and pepper and stir, making sure everything is fully incorporated.
  • Add potatoes and stir. Try to make sure that there are some potatoes on the bottom, touching the pan.
  • Let potatoes crisp for at least 5 minutes, up to 10 minutes. (Depending on how crispy you like your potatoes.)
  • Make 3 wells in the hash (I used a soup ladle) and then sprinkle half the cheese (1/2 cup) over the hash.
  • Crack 3 eggs into the wells. (Add more salt & pepper if you want)
  • Carefully place the hot skillet into the oven and bake for up to 10 minutes. (At 5 minutes the whites should be cooked but the yolk will be very runny, at 10 minutes the yolks should only be a little runny. Adjust to your tastes.)
  • Carefully remove skillet from oven and sprinkle with remaining cheese.
  • Garnish with scallions and jalapeno.
  • Serve immediately.
Pulled Pork Hash: A Weeknight Winner

Pulled Pork Hash: My Go-To Weeknight Meal

Life as a working mom is a whirlwind. Between juggling my career as a marketing manager, school pick-ups, soccer practice, and everything in between, finding time for a delicious, home-cooked meal often feels like a Herculean task. That's why I've become a huge fan of recipes that are both quick and impressive. This Pulled Pork Hash fits the bill perfectly. It's satisfying, flavorful, and surprisingly easy to make, even on the busiest of evenings.

The beauty of this dish lies in its versatility. I often use leftover pulled pork from the weekend, which makes the weeknight cooking process even faster. But even if you don't have leftovers, a quick trip to the deli counter can easily solve that. The recipe itself is adaptable to whatever vegetables I have on hand. Sometimes I swap the red pepper for bell peppers, or add some zucchini for extra veggies. The core remains the same: perfectly crispy potatoes, savory pulled pork, and the richness of melted cheese topped with perfectly cooked eggs. It's a symphony of textures and flavors that my family absolutely loves.

Beyond the Weeknight: This Pulled Pork Hash isn't just a weeknight warrior; it's also surprisingly impressive for brunch or a casual weekend gathering. The presentation is naturally beautiful, with the glistening potatoes, vibrant peppers, and golden-yolked eggs. It’s the kind of dish that's both satisfying and effortlessly chic. I've even served variations of it at small potlucks, receiving compliments galore. The best part is, the prep time is minimal, leaving me ample time to enjoy my guests and the company instead of being stuck in the kitchen.

Tips and Tricks for Pulled Pork Hash Success:

  • Crispy Potatoes are Key: Make sure your potatoes are thoroughly dried before you add them to the skillet. This helps them crisp up beautifully. Don't overcrowd the pan; work in batches if needed to ensure even browning.
  • Don't Overcook the Eggs: The cooking time for the eggs will depend on your oven and how runny you like your yolks. Start checking around the 5-minute mark and adjust accordingly.
  • Spice it Up: Feel free to experiment with different spices. A pinch of cayenne pepper or a dash of hot sauce would add a delicious kick.
  • Get Creative with Garnishes: While scallions and jalapenos are fantastic, don't be afraid to explore other garnishes. Fresh cilantro, chives, or even a sprinkle of your favorite hot sauce could elevate this dish to new heights.
