Step-by-step

Why is my batter dissolving in the hot oil? Cooks often encounter this issue when the rice has not been cooked down completely or chilled thoroughly before mixing. Achieving the proper consistency requires simmering the rice in milk over very low heat for at least 40 minutes until the starches break down into a thick porridge. Chilling this base overnight allows the starches to set firmly, creating a cohesive dough that holds its shape when dropped into the pan. Scaling the quantities requires proportional adjustments to the liquid and starch ratios to maintain this necessary thickness.

Mastering the Frying Process

Maintaining the correct oil temperature remains critical for successful frying. Peanut oil or extra virgin olive oil should reach 180 degrees Celsius before any batter touches the pan. Dropping portions larger than a walnut lowers the oil temperature too quickly and leaves the interior raw while the outside burns. Frying in small batches ensures steady heat recovery and prevents overcrowding. Turning the fritters frequently guarantees even browning and spherical development.

  • Monitor the thermometer constantly because fluctuating oil temperature leads to greasy, oil-logged fritters.
  • Fold the whipped egg whites gently into the chilled rice mixture to preserve the trapped air that keeps the interior light.
  • Drain the finished fritters immediately on paper towels to remove excess surface oil before applying the final sugar coating.
