Step-by-step

  • In the bowl of an electric mixer, dissolve the yeast and the honey in the warm water. Let it sit for 10-15 minutes, until the yeast activates and a foam cap forms.

  • Incorporate the sesame seeds.
  • Remove the bowl from the mixer, cover and place in a warm place for 1 hour to proof.
  • Cut the dough into 4-6 pieces.
  • Flatten each piece with your hands or a roller to about ⅛ - inch thick.
  • Cover the dough pieces with a piece of plastic wrap and let relax for 15 minutes.
  • Roll each piece out to #6 setting on the KitchenAid pasta roller attachment, which is about 1/64 inch or about 0.5 mm thick (see notes).
  • Lay the rolled out dough on a large baking sheet lined with parchment paper.
  • Cut the dough sheets into crackers of the desired size and shape. Large triangles or wedges work particularly well.

  • Store in airtight containers.

My Unexpected Culinary Adventure: Sesame Crackers and the Joys of Imperfection

As a busy fitness model, my life revolves around structure and routine. Precise meal planning, intense workouts, and meticulously tracked macros are my daily companions. You might imagine my kitchen is a sterile haven of protein shakes and perfectly portioned salads. But lately, there's been a delightful rebellion brewing – a rebellious streak of flour, water, and sesame seeds. It all started innocently enough, with a simple craving. A craving that led me down a path of culinary experimentation, resulting in these incredibly delicious sesame crackers. It wasn’t about strict macros or clean eating this time; it was about the pure joy of baking, something I hadn't allowed myself to indulge in for a long time.

I've always been somewhat intimidated by baking, seeing it as a precise science that demands perfection. My workouts are about measurable results, about hitting specific targets. Baking, I assumed, was the same. But this recipe changed my perspective entirely. It embraced a certain degree of happy accident; a slight variation in dough consistency, a minute longer or shorter in the oven – these weren't failures, they were explorations. The slightly uneven shapes, the varying shades of golden brown – they were all part of the charm, the proof of a process embraced rather than rigidly controlled. The result? Crispy, flavourful sesame crackers, a far cry from the rigid regime of my usual diet. They’re a reminder that even in a life structured around precision and discipline, there is always room for delightful spontaneity and unexpected pleasure.

This wasn't just about making crackers; it was about reclaiming a part of myself. The rhythmic kneading of the dough was a meditative process, a soothing counterpoint to the high-energy demands of my daily routine. The smell of baking sesame seeds filled my apartment with a comforting warmth, a stark contrast to the often sterile environment of my fitness-focused lifestyle. And the taste? Oh, the taste! Crispy, nutty, and subtly sweet, these crackers are far from just a simple snack. They’re a celebration of balance – the balance between discipline and indulgence, between routine and spontaneity, between the meticulously planned and the delightfully unplanned.

The Beauty of Imperfect Crackers:

The beauty of this recipe lies in its forgiving nature. Don't stress over achieving perfectly even crackers. Embrace the slight variations in thickness, the subtle inconsistencies in browning. These imperfections are what add character and charm. Think of them as tiny, edible works of art, unique and beautiful in their imperfections. These crackers became a symbol of self-acceptance and the realisation that striving for perfection in all aspects of life is not only exhausting, but also misses out on the beauty and joy of unexpected outcomes.

Beyond the Recipe: A Reflection on Balance:

The process of making these sesame crackers was more than just a culinary experience; it was a profound reflection on the importance of balance in life. In my world of fitness and competition, everything is meticulously planned and executed. But life, I've come to understand, isn't always about perfectly measured outcomes. Sometimes, the most fulfilling moments are the unplanned ones, the unexpected deviations from the norm. The sesame crackers have become a metaphor for this truth – a crispy reminder that embracing the imperfections, the unexpected, the spontaneous can lead to surprisingly delicious results.

More Than a Snack: A Symbol of Self-Care:

These sesame crackers are more than just a tasty snack; they represent a crucial aspect of my self-care routine. In a life dictated by strict schedules and demanding workouts, taking the time to bake these crackers is an act of rebellion against the pressures of my profession. It’s a moment of mindful engagement, a chance to disconnect from the constant demands of my career and reconnect with the simple joys of creativity and the satisfaction of creating something delicious from scratch. The process is just as important as the product; the kneading, the rolling, the baking—each step is a meditative practice that allows me to slow down, breathe deeply, and appreciate the simple act of nourishing myself, both physically and emotionally. They are a symbol of self-love, a reminder that taking care of oneself isn't selfish; it's essential.

So, go ahead and give this recipe a try. Embrace the imperfections, enjoy the process, and savour the delightful crunch of these homemade sesame crackers. You might just surprise yourself with what you discover along the way.
