Step-by-step

  • Preheat the oven to 180°C and toast the almonds in the oven.
  • In a large bowl, add the toasted almonds, strong flour, candied orange and citron zest (cut into small cubes), and panforte spices.
  • Line a round 18 cm diameter mold (preferably with a hinge, it will be much easier to remove the panforte once cooked) with a wafer.
  • In a saucepan over low heat, melt the honey with the powdered sugar and 3 tablespoons of water. Once the honey and sugar are completely melted and have turned into an amber syrup, remove the saucepan from the heat.
  • Pour the honey and sugar syrup into the bowl with all the other ingredients and mix with a spoon to combine everything: it will be a very firm mixture.
  • Pour the mixture into the wafer-lined mold and level the surface with a spoon.
  • Dust the surface with powdered sugar and bake in a hot oven for about 25-30 minutes, then remove the panforte from the oven, let it cool slightly and then remove it from the mold. If you wait until it is completely cold, the caramelized sugar will make this operation very complex! If this happens - as it happened to me - slightly heat the mold and the panforte will come out without problems.
  • Once the panforte is cold, dust it generously with powdered sugar.
