Step-by-step

  • Hull and quarter the strawberries.
  • Turn the saute mode on in the Instant Pot.
  • Add the frozen peaches to the pot first, add the prepared strawberries on top.
  • Pour the maple syrup and the lemon juice over the fruit.
  • Wait for about 2-3 minutes until the frozen peaches start melting and there's liquid at the bottom of the Instant Pot.
  • Put the lid on and turn the vent into the sealing position.
  • Press cancel to turn the saute mode off.
  • Press Manual or Pressure Cooker button (depending on your model) and using the arrow buttons set the cook time to 2 minutes. It will take about 10 minutes to come to pressure.
  • Once the Instant Pot beeps that the 2 minutes of cooking are done, let the pressure release naturally for 5 minutes before doing a quick release! IMPORTANT: it is very important to do a natural pressure release first! If you don't wait for a few minutes before venting the pressure manually, the liquid WILL OVERFLOW from the back of the Instant Pot! Also, make sure to put a kitchen towel over the vent when doing a manual release to catch all the pink juices. The back cup for the liquid will most likely get at least half full.
  • Mash the fruit with a fork or a masher until it's no longer in big chunks.
  • Turn the saute function on and add the chia seeds. Mix.
  • Let the Instant Pot Jam cook for about 3-5 minutes to thicken lightly.
  • Transfer to the clean jars and cool before eating. Cooling will help this Strawberry Chia Jam thicken and the chia seeds will soften a bit.

My Sweet Escape: A Simple Strawberry Chia Jam Recipe

Life as a busy working mom is a whirlwind of school runs, meetings, and deadlines. Finding time for myself, let alone cooking elaborate meals, feels like a luxury. But even in the midst of the chaos, I crave moments of peace and simple pleasures. This strawberry chia jam has become one of those pleasures – a quick, easy, and incredibly delicious recipe that brings a touch of sweetness to my hectic days.

The beauty of this recipe is its simplicity. Forget hours spent over a hot stove; this jam comes together in minutes thanks to the magic of my Instant Pot. It's a perfect example of how even the busiest individuals can incorporate wholesome, homemade goodness into their lives. The sweet, tart flavor of the strawberries perfectly complements the subtle nutty notes of the chia seeds, creating a jam that's both healthy and satisfying. It's far healthier than store-bought options, packed with natural goodness and free from refined sugars. I've discovered that little adjustments to our daily routines can make a big difference – this jam is one of those small changes that brings a large impact.

The versatility of this jam is also a huge plus. I love spreading it on toast for a quick breakfast, but it also elevates yogurt parfaits, oatmeal, and even pancakes to another level. The fact that it requires minimal effort is a considerable win in my book. It's a beautiful way to capture the essence of summer, even on those days when summer seems miles away. I often find myself enjoying a spoonful of this delightful treat straight from the jar, a quiet moment of self-care amidst the everyday hustle. The vibrant color alone elevates the mood. The experience of crafting this jam, from start to finish, is a meditative process for me. Its a reminder to slow down and appreciate the simple pleasures life offers.

Beyond the deliciousness and convenience, I find immense satisfaction in making my own jams. It's a small act of rebellion against the pre-packaged, processed foods that often dominate our grocery shelves. Knowing exactly what ingredients go into my jam gives me peace of mind. It's a personal touch, a reflection of my commitment to nourishing myself and my family with wholesome, homemade goodness. And what's more, it feels incredibly rewarding when I have a delicious jar to show for my efforts! In short, it is a journey into healthy eating and a reminder that taking care of yourself doesn't need to be complicated or time-consuming.

I highly recommend this Strawberry Chia Jam recipe to anyone looking for a quick, easy, and healthy way to add a burst of flavor to their day. It’s more than just a recipe; it’s a reminder that even in the busiest of lives, there’s always time for a little sweetness and self-care.

And lastly, a tip: the jam will thicken further as it cools, so don't worry if it seems a bit runny immediately after making it. The chia seeds work their magic over time, adding their unique texture and nutritional goodness to the mix. The result is a jam that is both delightful and healthy, perfect for those seeking a quick and easy treat.
