Step-by-step

  • Preheat your oven to 350F (180C). Line with parchment paper or lightly grease a large baking sheet.
  • Mix the nutritional yeast, soy sauce, olive oil, chili powder, garlic powder, and liquid smoke together in a large bowl. It will make a brown paste-like texture.
  • Crumble the block of tofu with your fingers into the bowl along with the seasoning. Mix the tofu crumbles with the seasoning, making sure all of the tofu is evenly coated.
  • Spread the tofu crumbles evenly over the pan. Bake for 35 to 45 minutes, stopping to stir the tofu every now and then. Keep a close eye on it towards the end so that it doesn't burn. You want the tofu to be nice and browned. The smaller crumbles will be darker than the larger crumbles, and that's ok because it will provide a variety of texture.
  • In the meantime, heat the tomato sauce, and cook pasta according to package directions.
  • Stir the tofu into the sauce, and heat through. If you find the sauce is too thick, stir in a bit of water until the desired consistency is reached.
  • Serve over hot pasta with a sprinkle of Parmegan.
Tofu Bolognese: A Hearty and Delicious Vegan Meal

My Unexpected Love Affair with Tofu Bolognese

As a busy professional, finding time to cook healthy and satisfying meals can be a real challenge. I often find myself grabbing takeout or resorting to quick, less-than-healthy options. But lately, I’ve been trying to prioritize my well-being, and that includes making nutritious food a priority, even on the busiest of days. This led me down a path of experimenting with vegetarian and vegan recipes, something I hadn't really explored before. I always thought vegan food was bland or complicated, but I was so wrong!

My latest culinary adventure? Tofu Bolognese. I was initially hesitant; bolognese is a classic dish, rich and comforting, and the idea of replacing meat with tofu seemed…radical. However, curiosity got the better of me. I stumbled upon this recipe (I can't remember where exactly, it might have been some online recipe post) and decided to give it a shot. Let me tell you, it was a revelation! It exceeded all my expectations. The flavour was incredible - deep, savory, and surprisingly rich, even without the meat. The texture was fantastic, too. The crispy, browned tofu pieces added a satisfying crunch that perfectly complemented the smooth tomato sauce.

The beauty of this recipe lies in its simplicity. It's quick to prepare – perfect for a weeknight meal. The ingredients are readily available, and the process itself is incredibly straightforward. I've become obsessed with its versatility, adding various vegetables, such as mushrooms, bell peppers, or zucchini, to create a more substantial and colorful dish. Sometimes, I even add a handful of spinach for an extra nutritional boost.
