Step-by-step

  • Sterilize 4 two-liter (1/2 gallon) glass mason jars.
  • Fill each jar halfway with the cut up apples, leaving a couple inches of headspace.
  • In a large pot, dissolve the sugar and water. Pour over the apples, making sure they're covered completely.
  • Secure a clean piece of fabric or cloth over each jar. IMPORTANT: do not cover with a sealed lid, or it will explode (the fabric is breathable, allowing the gases that develop during fermentation to escape).
  • Set the jars in a cool, dark spot for 2 to 3 weeks.
  • Check periodically to make sure you see air bubbles begin to form at the top (good!), and that there's no mold on the apples (bad).
  • If the apples float to the top, add something to weigh them down, and keep submerged in the liquid.
  • After the first round of fermenting, strain & discard the apples (it feels wasteful, I know. I added them to my compost).
  • Pour the strained young vinegar into clean, sterilized glass jars, cover again with cloth, and let sit for 4 to 6 more weeks.
  • Begin taste testing at 4 weeks for desired strength.
  • Use as you would apple cider vinegar in any recipe.
Homemade Apple Cider Vinegar: A Journey from Orchard to Kitchen

My Homemade Apple Cider Vinegar Adventure

As a busy working mom, I'm always on the lookout for ways to simplify my life and improve my family's health. One area I've been focusing on recently is making more of our household products from scratch. This not only saves money but also gives me peace of mind knowing exactly what's in the products we use. My latest endeavor? Making my own apple cider vinegar (ACV).

The idea initially seemed daunting. I pictured complex processes, specialized equipment, and a whole lot of time I didn't have. However, the reality was surprisingly simple and incredibly rewarding. The process itself was a journey of discovery, a mini-science experiment unfolding right in my kitchen. Watching those little air bubbles form, knowing that the magic of fermentation was taking place, was strangely satisfying. And the end result? A pungent, tangy, and completely natural ACV that's far superior to anything I can buy in the store. It’s become a staple in our household, used in everything from salad dressings and marinades to cleaning solutions and even a hair rinse.

I started with a simple recipe, easily found online, and with the abundance of apples available during autumn, it was the perfect project. The initial steps were surprisingly straightforward. Cleaning the jars, prepping the apples (a task I happily delegated to my kids!), and then the satisfying process of layering apples, water and sugar was calming. The waiting period, while a little anxious, gave me a chance to anticipate the final product. The regular checks ensured the process was on track and gave me a sense of connection to the process. The smell during the fermentation was initially quite pungent, but then developed into a more refined vinegar smell. I even added some of the strained apple pulp to my compost. Nothing went to waste!

The most rewarding part? The taste test. It was at this point I truly appreciated my efforts. The flavour was unlike anything I could purchase, richer and more complex than store-bought varieties, hinting at the apple's sweetness and the tang of fermentation. Now, I not only have a fantastic vinegar, but also a sense of accomplishment from creating something from scratch. It’s a process that connected me to a simpler way of life. I encourage everyone to try it; it's easier than you think and infinitely more satisfying.

Beyond the practical benefits, this project reignited my love for homemaking and the joy of creating something tangible. The satisfaction of seeing the transformation from raw apples to a useful product is immeasurable. The whole process has made me appreciate the simplicity of things and has given me a newfound respect for the natural processes that nourish us.

My next adventure will be experimenting with different types of apples, and perhaps even trying different fruits entirely. I'm already dreaming up new uses for my homemade vinegar—a homemade cleaning spray perhaps? The possibilities are endless. This simple project has opened up a world of possibilities. I encourage everyone to embrace the magic of homemaking and try making their own ACV. It's a rewarding experience, and the result is an amazing product.

Making your own apple cider vinegar is a fantastic way to connect with the natural world, reduce your reliance on commercially produced goods, and gain a greater understanding of the food we consume. It’s a journey worth taking. The satisfaction of creating something useful and delicious from scratch is deeply satisfying. So, grab those apples, and happy fermenting!
