As a busy mom always on the go, I'm always looking for recipes that are easy to prepare and that my whole family will enjoy. This Italian casserole fits the bill perfectly.

It's a one-pot meal that's packed with flavor and can be customized to your liking. I like to add plenty of vegetables, such as onions, green peppers, and corn. And, of course, no Italian casserole would be complete without cheese! I use a combination of mozzarella and Parmesan, but you can use any type of cheese you like.

This casserole is also a great way to use up leftover cooked meat. I often use ground beef or sausage, but you could also use chicken, turkey, or even tofu. Just add it to the pot along with the other ingredients and simmer until heated through.

The best part about this casserole is that it can be made ahead of time and reheated when you're ready to serve. This makes it a great option for busy weeknights or for potluck gatherings. Plus, it's a dish that everyone will love, making it a perfect choice for any occasion.
