Step-by-step

  • Press Sauté and adjust to pre-heat the pressure cooker at the high setting.
  • Then, add oil and brown the turkey pieces on two sides – working in batches if needed (about 5 to 10 minutes).
  • Remove the turkey pieces and set aside, in the empty pressure cooker add the onion and green pepper.
  • Sauté, stirring infrequently until the onions have softened (about 3 minutes).
  • Toss in the cumin and red pepper flakes and sauté for another 30 seconds.
  • Add the thyme sprigs, beans, tomato paste, chopped tomatoes and stock and stir well.
  • Close and lock the lid of the pressure cooker. Choose the Bean/Chili program and use the Adjust button to choose Less mode to run for 25 minutes.
  • When time is up, open the cooker by manually releasing the pressure very slowly. If anything other than steam comes out of the valve, stop and count to 10 before releasing the pressure slowly (or in small bursts), again.
  • Press Sauté and mix-in the salt, white pepper and cumin powder and simmer uncovered, stirring occasionally until the desired consistency is reached (about 5 minutes).
  • While the contents simmers, use the spoon/spatula to fish out the pieces of turkey and press them against the side of the cooker to break them up a little.
  • Portion and sprinkle with garnish before serving. Enjoy!
Hip Turkey Chili: A Weeknight Wonder

My Go-To Weeknight Chili: Simple, Flavorful, and Fast

As a busy working mom, finding time to cook a healthy and delicious dinner can feel like a Herculean task. But I've discovered the secret weapon that’s changed my weeknight dinners: the Instant Pot. It’s a lifesaver, especially when it comes to chili. This Hip Turkey Chili recipe is my go-to; it’s quick, easy, and bursting with flavor—perfect for those nights when you’re short on time but still want a satisfying and hearty meal.

Forget spending hours simmering chili on the stovetop. This Instant Pot version cuts down the cooking time significantly, allowing me to spend more quality time with my family. The best part? The results are just as rich and flavorful as any slow-cooked chili. The turkey is tender and juicy, the beans are perfectly cooked, and the spices blend beautifully to create a complex and comforting flavor profile. I often adjust the spices based on my mood and what I have on hand—sometimes adding a touch of smoky paprika for a deeper flavor, or a splash of lime juice for brightness.

Why This Recipe Works:

  • Speed and Convenience: The Instant Pot significantly reduces cooking time, making it ideal for busy weeknights.
  • Flavorful and Hearty: The combination of turkey, beans, and spices creates a deeply satisfying and flavorful chili.
  • Healthy and Nutritious: This chili is packed with protein and fiber, making it a healthy option for the whole family.
  • Versatile: Easily customize the recipe to your liking by adding different vegetables, beans, or spices.
  • Perfect for Meal Prep: This chili is great for meal prepping. Make a big batch on the weekend and enjoy delicious leftovers throughout the week.

I typically serve this chili with a dollop of plain Greek yogurt or a sprinkle of fresh cilantro for an extra touch of freshness. Cornbread is also a fantastic accompaniment, soaking up the delicious chili broth. Sometimes I even add a fried egg on top for extra protein and richness. The possibilities are endless! This recipe is incredibly adaptable, making it a perfect canvas for your culinary creativity.

Beyond the Weeknight:

While this chili shines on a busy weeknight, it's also a fantastic choice for gatherings. It's easily scaled up to feed a crowd, and it's a crowd-pleaser, no matter the occasion. Imagine the aroma filling your kitchen as your friends and family gather around, ready to enjoy this flavorful and comforting chili. It’s a dish that fosters connection and warmth, making it perfect for both casual get-togethers and more formal events.

Tips and Variations:

  • Spice Level: Adjust the amount of red pepper flakes to control the spice level.
  • Bean Variety: Feel free to substitute other types of beans, such as black beans, pinto beans, or even chickpeas.
  • Meat Options: While turkey is delicious, you can substitute ground beef, chicken, or even vegetarian crumbles.
