Step-by-step

  • Preheat oven to 350F
  • Add all the sugar and water in a pan.
  • Simmer over medium heat and stir until the sugar is completely dissolved and forms a syrup.
  • Then allow mixture to cool.
  • Peel the light skin off the ginger (you can do this easily by scraping it with a small sharp knife) wash and grate finely, then add ginger to flour.
  • Slowly add sugar syrup to flour and ginger mixture and form into dough. Do not make dough too sticky.
  • Pull dough into 2-inch pieces, use a rolling pin or a clean 1-quart bottle and roll dough into paper thin sheets.
  • Put rolled out dough on greased baking sheets and place in oven.
  • Pennepis is done when it is golden brown, you have to constantly monitor them because they get done very quickly! Try placing just one in first to see how quickly it cooks – you may find that you can just about roll out one while the previous one cooks.
  • Don’t let them overcook or the sugar might begin to taste bitter.
The Delightful Simplicity of Pennépis

A Taste of Tradition: My Pennépis Baking Journey

The scent of warm ginger and caramelized sugar still lingers in my memory, a fragrant echo from my grandmother's kitchen. It's the smell of Pennépis, a simple yet utterly enchanting treat that's been a part of our family for generations. This isn't just a recipe; it's a piece of our heritage, a connection to the past, and a delicious way to share a bit of joy with those we love. Baking Pennépis is more than just following instructions; it's a mindful process, a meditation of sorts, where the rhythmic rolling of the dough and the watchful eye on the oven become a form of self-care and a tribute to those who baked this sweet delicacy before me.

The beauty of Pennépis lies in its deceptive simplicity. With just a handful of ingredients – flour, sugar, ginger, and water – a magical transformation takes place. The subtle warmth of the ginger, the delicate crunch of the cookie, and the subtle sweetness of the caramelized sugar create a harmonious blend that's both comforting and delightful. It's the kind of treat that satisfies without being overwhelming, a perfect accompaniment to a cup of tea on a cool evening or a delightful addition to a festive gathering.

More than just a cookie, Pennépis represents a connection to my roots. Each time I bake them, I feel closer to my grandmother, remembering the countless hours spent in her kitchen, learning the nuances of cooking and baking, imbibing not just the techniques but the spirit of hospitality and generosity she possessed. Making these cookies isn't just about following a recipe; it's about preserving a tradition, about sharing a love of food and family. It's about creating memories that will last a lifetime, as sweet and warm as the cookies themselves.

The process itself is oddly meditative. The gentle rolling of the dough, the careful placement of the delicate discs onto the baking sheet, the watchful wait for that perfect golden-brown hue – it's a rhythmic dance that demands patience and attention. But the reward is well worth the effort. That first bite, that initial explosion of ginger and sugar, that satisfying crunch – it's an experience that transports me back to those cherished moments in my grandmother's kitchen.

I encourage you to try this recipe, not just for the delicious result but also for the opportunity to connect with something larger than yourself, to connect with your heritage or your own family traditions, or simply to slow down and savor the moment.
