Step-by-step

  • Make a marinade by blending the vinegar, thai chilis, bell pepper, garlic, sugar, and rosemary, if using.
  • Season your chicken thighs with salt and pepper to taste (I omitted this step, to be honest – it didn’t seem to need it). Marinate your chicken thighs with half of the sauce for a minimum of 15 minutes and up to two hours.
  • Preheat your oven to broil (500°F) with the rack set to the middle position. At the same time, cover a baking sheet with aluminum foil and place a rack on top.
  • Meanwhile in a small saucepan, bring the other half of the sauce up to a very low simmer and hold it there until you are done.
  • When you are done marinating, position the chicken on the rack spacing each thigh about 1/2” apart.
  • Place the chicken in the oven, check back every 5 minutes or so for signs of burning, you want a little char, but not too much.
  • After 15 minutes has elapsed, flip the chicken and place back in the oven for another 15 minutes.
  • Remove and serve with the simmered piri piri sauce.

My Quick and Easy Weeknight Piri Piri Chicken

As a busy working mom, finding time to cook delicious, healthy meals can feel like a Herculean task. Between work deadlines, school pick-ups, and trying to squeeze in a workout, the thought of spending hours in the kitchen is often overwhelming. That's why I'm always on the lookout for recipes that are both flavorful and incredibly efficient. This Nando's-inspired Piri Piri Chicken is my new go-to – it's ready in under an hour, requires minimal prep, and the result is a restaurant-quality meal that my entire family devours.

The beauty of this recipe lies in its simplicity. Six ingredients (plus salt and pepper, of course!) come together to create a vibrant, spicy, and utterly addictive sauce. I love that it's customizable; sometimes I add a little extra chili for a fiery kick, other times I leave out the rosemary for a simpler flavor profile. The key is the marinating process – allowing the chicken to soak up the flavors really makes all the difference. While the chicken marinates, I typically tackle other dinner prep tasks, making the entire process incredibly manageable.

The oven-broiling method is also key to achieving that perfect char, mirroring the beloved Nando's style. I find that keeping a close eye on the chicken during the broiling process is important to avoid burning. A little char adds a delightful smokiness that elevates the dish. The simmered sauce adds an extra layer of richness and depth, making it a perfect dipping sauce for the chicken. I've served this with everything from roasted vegetables to simple rice and quinoa, and it's always a hit.

Beyond its convenience, this recipe has other advantages too. It's a great way to incorporate more vegetables into our diet – the bell pepper adds both flavor and a pop of color to the sauce. And the use of fresh herbs like rosemary adds an aromatic layer of complexity. Plus, it’s incredibly versatile – leftovers are fantastic cold in salads or sandwiches the next day.

This isn't just a quick weeknight dinner; it’s a testament to the fact that delicious, satisfying meals don't have to be complicated or time-consuming. It's a reminder that even amidst the chaos of daily life, finding moments to savor good food with the people you love is something worth cherishing.

Tips and Variations:

  • Spice Level: Adjust the number of Thai chilis to control the spiciness. For a milder version, use fewer chilis or even substitute with milder peppers.
  • Herb Variations: Experiment with other herbs like oregano or thyme in place of rosemary.
  • Chicken Cuts: While chicken thighs work best, you can also use boneless, skinless chicken breasts.
  • Serving Suggestions: Serve with rice, couscous, roasted vegetables, or a fresh salad.
  • Make it Ahead: The marinade can be made ahead of time and stored in the refrigerator for up to 3 days.

This simple yet flavorful recipe has become a staple in my home, and I hope it becomes a favorite in yours as well. Enjoy!
