Step-by-step

  • Preheat oven to 450F.
  • Slice the bottom off the bulb of garlic to expose most of the cloves. Place on a baking tray lined with parchment paper with the exposed cloves up. Drizzle 1 teaspoon of oil over exposed cloves of garlic.
  • On the rest of the lined baking tray, arrange bell pepper, onion, and tomatillos in a single layer.
  • Roast in oven until tomatillos are nicely browned and soft, about 25 minutes.
  • Remove from oven and set aside for a minute or two to cool.
  • Remove garlic cloves from the bulb and remove any remaining skin.
  • In a blender, pulse the bell pepper, onion, garlic, tomatillos, Hatch or other chilies, and a handful of cilantro. Don’t puree – we want it a little chunky.
  • In a Dutch oven over medium heat, or in your Instant Pot on Sauté, heat the remaining 2 tablespoons of oil.
  • Generously season cubed pork with salt and pepper. Brown the pork working in batches.
  • If sautéing in an Instant Pot, mix in the cumin and oregano now. If using a slow cooker, mix in the cumin and oregano after transferring the meat to the slow cooker.
  • Add bay leaves.
  • Pour over the green sauce.
  • Add chicken broth.
  • Cook in a slow cooker for 6-7 hours, or until pork is almost fall-apart tender. If you are using an Instant Pot, lock lid into place, seal vent, and cook on meat setting for 45 minutes.
  • Turn Instant Pot off when it finishes its cycle and allow the cooker to cool down naturally. Don’t open until the float valve has dropped completely. Trust me, it’s totally worth the wait!
  • Chop remaining cilantro. Stir in about half of remaining cilantro, while saving the rest to use as a garnish for the top.
  • Season with additional salt and pepper to taste.
  • Enjoy.

My Unexpected Culinary Adventure: Mastering Pork Chile Verde

As a busy professional, time is my most precious commodity. Weeknights are a whirlwind of meetings, deadlines, and the occasional frantic dash to the gym. So, when it comes to dinner, convenience and flavor are paramount. I’ve always been a fan of hearty, flavorful meals that require minimal effort, and recently, I discovered a new favorite: Pork Chile Verde. This isn’t your grandmother’s pot roast; it’s a vibrant, flavorful explosion in a bowl that can be easily prepared in either a slow cooker or an Instant Pot – two kitchen appliances that have become my best friends.

My journey with this recipe began quite unexpectedly. I was flipping through a food blog (I confess, I spend far too much time scrolling through delicious-looking recipes online!) when this Pork Chile Verde recipe caught my eye. The vibrant green sauce, the tender chunks of pork… it was love at first sight. I’m always looking for ways to streamline my weeknight dinners, and the promise of a slow-cooker or Instant Pot option sealed the deal. The beauty of these appliances is their ability to do the work for you. You simply throw in the ingredients, set the timer, and voila! A delicious and satisfying meal awaits you when you return home, ready to be devoured after a long day.

This Pork Chile Verde recipe exceeded all my expectations. The slow-cooked pork was unbelievably tender, melting in your mouth with each bite. The vibrant green sauce was a perfect blend of spicy, tangy, and herbaceous, with the perfect amount of heat. I particularly love the way the flavors meld together over time – the longer it simmers, the richer and more complex the taste becomes. The recipe itself is surprisingly easy to follow, even for a culinary novice like myself. The instructions were clear and concise, and the ingredients were readily available at my local grocery store. Even better, the leftovers made for an equally satisfying lunch the next day. I have now added this to my go-to meal rotation and can’t wait to make it again soon. It’s perfect for a cozy night in, a casual get-together with friends, or even a special occasion.

One of the things I appreciate most about this recipe is its versatility. I’ve already experimented with different variations. I’ve added a splash of lime juice for extra zing, or used a different type of chili for a different level of heat. The possibilities are endless! I’ve also served it with different sides, including rice, cornbread, or even just a simple salad. No matter how I serve it, this Pork Chile Verde is always a crowd-pleaser.

Beyond the Recipe: A Reflection on Busy Lives and Simple Pleasures

This isn’t just about a recipe; it’s about finding moments of joy and satisfaction amidst the chaos of daily life. In our fast-paced world, we often sacrifice quality time in the kitchen for convenience. But this recipe demonstrates that creating a delicious, wholesome meal doesn’t have to be a monumental task. With a little planning and the help of modern kitchen appliances, we can enjoy flavorful, satisfying meals without sacrificing precious time. Tips for Success:

Don’t skimp on the roasting stage: Roasting the tomatillos, onions, and peppers brings out their natural sweetness and creates a deeper flavor. Take your time here – it’s worth the effort!

Adjust the heat to your liking: The amount of chili peppers you use will determine the level of heat. Start with less and add more as needed to your taste preference.

Embrace the leftovers: This recipe tastes even better the next day! The flavors have time to meld, creating a richer, more intense taste.

So, if you're looking for a delicious, easy, and flavorful meal to add to your repertoire, I highly recommend trying this Pork Chile Verde.
