Slow Cooker Thai Peanut Chicken

Yes, I realize that yesterday I wrote about my addiction to peanut butter and today I am writing a recipe that includes peanut butter maybe I am not quite over my addiction yet and I am trying to finish the jar so I don’t continue to eat it by the spoonful however it may be worth it to have around just to make this yummy chicken creamy, delicious, and honestly just as good as the Thai peanut chicken I order from around the corner. I served it over a 1/2 cup of rice noodles for an extra 2 points. I adapted this recipe from a terrific blog called A Year Of Slow Cooking to lighten it up a bit.

It's the culinary equivalent of a superhero cape, allowing me to conjure up delicious, satisfying meals even on the busiest of days. And this Thai Peanut Chicken recipe? It's a testament to the slow cooker's magic, a simple yet incredibly flavorful dish that's become a staple in our house.

The aroma alone is enough to make your mouth water. The tender chicken, infused with the rich, creamy peanut sauce, is a symphony of flavors. Sweet, savory, and slightly spicy – it's the perfect balance that keeps everyone coming back for more. My kids, notoriously picky eaters, gobble it up without complaint, which is a victory in itself! I love how versatile this recipe is. Sometimes I serve it over rice noodles, as suggested in the original recipe, for a lighter meal. Other times, I pair it with fluffy white rice, adding a comforting element to the dish. The toppings are also a fun way to customize it. A sprinkle of fresh cilantro and a squeeze of lime add a bright, refreshing touch. Sometimes, I even throw in some chopped peanuts for extra crunch. The possibilities are endless!

The Beauty of Simplicity

What makes this recipe truly special is its simplicity. The ingredients are readily available, and the steps are incredibly straightforward. Even on a day when I'm juggling a million things, I can easily throw everything into the slow cooker in the morning and come home to a ready-made dinner.
