Chicken Patties

I had a craving for a chicken burger and didnt have any on hand so I came up with this. The Italian dressing adds a lot to the flavor. I like to use the entire envelope but you might prefer to only use 2 teaspoons. They are also great with ranch dressing mix. I have made them both ways. I usually make a big batch of these and freeze them for quick lunches and snacks. I make smaller patties to eat on rolls but you can make them bigger to be used with hamburger buns and serve them with lettuce and tomato.

My Go-To Chicken Patties: A Busy Woman's Recipe

As a working mom, time is my most precious commodity. Dinner needs to be quick, easy, and preferably something I can prep ahead of time. That's where these chicken patties come in. I stumbled upon this recipe a while ago, and it's become a staple in our household. What started as a way to satisfy a sudden craving for a chicken burger has evolved into a versatile meal solution that adapts to any occasion.

The beauty of this recipe lies in its simplicity and adaptability. I often find myself doubling or tripling the batch, shaping the patties into various sizes, and freezing them for those hectic weekdays. Smaller patties are perfect for quick lunches slipped into my work bag, while larger ones are ideal for serving on hamburger buns with all the fixings for a satisfying family dinner. Sometimes, when I'm particularly pressed for time, I’ll even use canned chicken, significantly reducing the prep time. The taste remains consistently delicious, regardless of the method.

One of the things I love most about these patties is the flavor. The Italian dressing mix adds a depth of flavor that elevates these beyond your typical chicken patty. I typically use the entire packet, but feel free to adjust to your preference. A sprinkle of freshly cracked pepper enhances the savory notes. The breadcrumbs provide a pleasing texture, and a little mayonnaise adds richness and moisture.

The versatility of this recipe extends beyond its convenience. I've served these patties in various ways. They're fantastic on hamburger buns with lettuce, tomato, and your favorite condiments. They're equally delicious nestled in a warm pita bread with hummus and a side salad. I’ve even experimented with using them as a base for chicken salad sandwiches. They’re quick to make, and the cleanup is minimal. This allows me to focus on other things that demand my attention rather than spending hours in the kitchen.

Beyond the convenience and taste, this recipe offers a satisfying and healthy meal option. Chicken is packed with protein, keeping me energized throughout my busy day. While I haven’t meticulously tracked the nutritional details, I know it’s a balanced meal choice. The addition of breadcrumbs and green onions provides some added fiber and nutrients. This recipe is a win-win for both my time and my health.

This recipe is more than just a quick meal; it's a testament to the power of simple ingredients, clever preparation, and a dash of creativity. It's a recipe that reflects my life as a busy mom—always on the go, always looking for ways to make life easier, but never compromising on flavor or quality.

So, the next time you're feeling overwhelmed by the demands of your day, remember this recipe. It's your secret weapon against a rushed schedule, a delicious solution that will leave you feeling satisfied and empowered. And who knows, maybe it will even become your go-to recipe too.

Tips for Success:

  • Make it Ahead: Double or triple the recipe and freeze the patties for quick meals throughout the week.
  • Adjust the Seasoning: Feel free to experiment with different herbs and spices to customize the flavor to your liking.
  • Customize the Size: Make smaller patties for sandwiches or larger ones for burger buns.
  • Canned Chicken Option: Use canned chicken for a significantly faster prep time.
