This was one of those serendipitous happenings that continue to amaze amuse me. My DS called me on a Wednesday evening around suppertime to ask if it would be alright to come visit for the weekend, bringing his boys. They would arrive Friday at suppertime. Since I knew that DD and her family would want to be included for dinner to give her more time to visit with her brother over the weekend I suddenly went from just me for dinner to eight for dinner What to fix at the last minute like this A while later I was reading the paper and came across this recipe in the food section and thought AH HA Dinner I bought the ingredients after work on Thursday and Friday morning everything went into the crock pot I made a double batch. When I got home after work I made a salad wrapped bakery Italian bread in foil to heat in the oven and started the water boiling for the spaghetti. Everyone LOVED it as I did too and the leftovers were scarfed up by the grand kids the next day for lunch. Age ranges of diners were 18 months up to well lets just say Im a grandmother of five This will definitely be a repeater at my house Recipe courtesy of B Mills A Ross of Desperation Dinners column in the Raleigh NC News Observer

The aroma of simmering tomatoes and meatballs filled my kitchen, a comforting scent that promised a delicious weekend gathering. My grandson's surprise visit had thrown a wrench into my quiet dinner plans, transforming a simple meal for one into a feast for eight. Panic initially set in – what could I possibly make on such short notice that would satisfy a crowd ranging from toddlers to seasoned adults? Then, a stroke of luck! While browsing the newspaper's food section, I stumbled upon a recipe that seemed almost too perfect: Slow Simmered Spaghetti and Meatballs. The simplicity of the recipe, its promise of hearty flavor, and, most importantly, its suitability for the slow cooker, made it a perfect last-minute solution.
The next day, armed with a shopping list, I quickly gathered the ingredients. The beauty of this recipe lies in its adaptability; you can use any tomato-based spaghetti sauce you prefer. I opted for a classic marinara, knowing its familiar appeal would please everyone. Friday morning, I prepped the crock-pot, layering in the juicy tomatoes, fragrant garlic and onions, a generous sprinkle of Italian seasoning, and finally, a batch of frozen meatballs – no need to thaw! The slow cooker took over from there, working its magic throughout the day. All I had to do was pop the spaghetti in to boil and prepare a simple side salad while the heavenly aroma wafted through the house.
As Friday evening approached, and the family started arriving, a sense of warmth and anticipation filled the air. It was more than just a dinner; it was a gathering of generations, connecting around a shared table. The simple act of passing around the Parmesan cheese sparked conversations and laughter. The kids, captivated by the delicious meatballs, devoured their portions with gusto, their little faces smeared with tomato sauce, reflecting the joy of a shared meal. The adults, equally impressed by the hearty, flavorful dish, shared stories and laughter throughout the evening. The slow cooker had worked its magic, transforming a stressful last-minute situation into a wonderfully memorable family gathering.
