Step-by-step

  • Heat oven to 450
  • Add all ingredients in bowl and mix
  • Spray muffin pan with a non-stick spray
  • pour mixture into prepared muffin pan
  • bake about 15 minutes until golden brown
  • IMPORTANT: keep and eye on them, as soon as the top is golden brown, take them out. Oven temp's can vary, there-by making the cooking time vary a little also!
  • I don't suggest using paper baking cups, these muffins are so light they will tear into pieces when the paper is pulled off them.

High heat is essential for achieving a proper rise in batters leavened exclusively by the chemical agents already blended into self-rising flour. Setting the oven to 450 degrees Fahrenheit ensures rapid expansion before the structure sets. Stirring the milk, sugar, flour, and mayonnaise just until combined prevents the gluten network from overdeveloping. Mixing too vigorously yields tough, rubbery crumb structures.

Paper liners cause severe structural failures in delicate bakes like these. Skipping paper baking cups in favor of a greased metal muffin tin prevents the crumb from shredding upon removal. Metal conducts thermal energy directly to the batter edges, promoting rapid crust formation. Grease the pan thoroughly with non-stick spray to guarantee clean release.

Visual cues override strict timing when determining doneness at high temperatures. Baking proceeds rapidly, typically finishing around 15 minutes. Watch the upper surfaces carefully. Extract the pan immediately once the crowns turn an even golden brown. Residual heat will continue cooking the interior after removal from the heat source.

Leftover portions freeze successfully for up to one month if wrapped tightly in foil. Reheat thawed units in a 350-degree oven for five minutes to restore the exterior crispness. Avoid microwave heating, which introduces moisture and destroys the tender texture.
