Step-by-step

  • In a medium or large skillet, heat olive oil over medium heat.
  • Add onion and sliced mushrooms. Saute about 5-6 minutes, or until onion is translucent and mushrooms are starting to brown. (Most of the liquid should be evaporated).
  • Add garlic and cook 1 minute more.
  • Add cauliflower rice, zucchini, and diced tomato. Add 1/3 cup broth.
  • Cook over medium heat to evaporate the broth and cook the veggies. This should take about 5-6 minutes. If needed, add a little more broth to the pan to keep cooking. (You should only have about 1-2 Tbsp liquid in the bottom of the pan at this point).
  • Add spinach and sun-dried tomatoes and cook about 3-4 minutes to wilt the spinach.
  • Add salt and pepper, to taste.
  • Serve warm with your favorite proteins or healthy fats!
Mediterranean Cauliflower Rice Skillet: A Weeknight Winner

Mediterranean Cauliflower Rice Skillet: A Weeknight Winner

As a busy working mom, finding time to cook healthy and delicious meals can feel like a Herculean task. Between work deadlines, school pick-ups, and the never-ending to-do list, whipping up something elaborate from scratch often gets pushed to the bottom of the priority pile. But I refuse to compromise on nutrition, and neither should you. That's why this Mediterranean Cauliflower Rice Skillet has become a staple in my weeknight dinner rotation. It's quick, easy, packed with flavor, and incredibly versatile.

The best part? This recipe is unbelievably adaptable. Feel free to swap out ingredients based on what you have on hand or what's in season. Don't have zucchini? Use bell peppers instead. Out of sun-dried tomatoes? A sprinkle of fresh herbs will do the trick. The beauty of this dish lies in its simplicity; it's a blank canvas for your culinary creativity. I’ve been known to add leftover grilled chicken or chickpeas for extra protein, and a dollop of Greek yogurt adds a creamy tang that elevates the whole dish.

What makes this skillet so special? It’s the perfect marriage of healthy and delicious. Cauliflower rice provides a low-carb, healthy alternative to traditional rice, while the Mediterranean-inspired flavors – garlic, onions, sun-dried tomatoes – add a vibrant burst of taste. The combination of textures, from the tender zucchini to the slightly crunchy cauliflower rice, keeps things interesting. The entire meal comes together in under 20 minutes, making it ideal for even the busiest of evenings. And cleanup is a breeze – just one skillet to wash!

Beyond the Weeknight: This versatile skillet isn't just for weeknights. It's equally perfect for a light lunch, a vibrant side dish at a barbecue, or even a make-ahead meal prep option for busy lunches. The flavors deepen and meld beautifully when refrigerated overnight, making it a fantastic option for meal prepping. Simply pack it up in individual containers and enjoy throughout the week. The recipe also makes great leftovers, making it perfect for those days when you just don't have the energy (or the time) to cook.

Tips and Variations:

  • Spice it up: Add a pinch of red pepper flakes for a little heat.
  • Boost the protein: Add cooked chicken, shrimp, chickpeas, or lentils.
  • Add some cheese: Sprinkle with feta or parmesan cheese before serving.
  • Make it creamy: Stir in a dollop of Greek yogurt or a splash of cream at the end.
  • Fresh Herbs: Experiment with different fresh herbs like basil, oregano, or parsley.
  • Lemon Zest: A touch of lemon zest at the end adds brightness and elevates the flavors.

This Mediterranean Cauliflower Rice Skillet isn’t just a recipe; it's a solution. A solution to the age-old problem of quick, healthy, and delicious dinners. It's a testament to the fact that nourishing meals don’t have to be complicated or time-consuming. So, the next time you're staring into your refrigerator, wondering what to make for dinner, remember this easy, flavorful skillet. You won't be disappointed.
