Step-by-step

  • Preheat the oven to 350 and position the rack on the bottom.
  • Spray a glass pie dish with cooking spray.
  • Measure all of the dry ingredients into a medium bowl and mix thoroughly with a whisk.
  • Add the butter and mix with a spatula until the butter is distributed and the mixture resembles moist crumbs with larger clumps throughout. It should be moist but not wet and sticky.
  • Dump the peanut flour crust mixture into the pie plate.
  • With your fingers, distribute the crumbs around the pie plate and up the sides.
  • Place a piece of waxed paper over the crust and with a flat bottomed glass, press the crust into the plate. Take your time, crumb crusts are a bit fiddly.
  • Bake on the bottom rack for 10 - 15 minutes or until it just begins to brown.
  • Remove and let cool completely before filling.
  • I suggest letting the filling sit overnight before cutting and serving.
My Peanut Flour Pie Crust Adventure

A Busy Mom's Delicious Discovery: The Peanut Flour Pie Crust

Life as a working mom is a whirlwind. Between early mornings, school runs, demanding deadlines, and trying to squeeze in a workout, finding time for anything beyond the bare necessities often feels impossible. Cooking, especially baking, usually falls to the wayside. Yet, there’s a deep-seated satisfaction in creating something delicious from scratch, something that brings a touch of joy and comfort to our hectic lives. That’s why I was so thrilled when I stumbled upon this peanut flour pie crust recipe. It's surprisingly quick, incredibly adaptable, and most importantly, absolutely delicious.

I’ve always been a fan of pie, but the traditional crusts often felt like a monumental undertaking. The rolling, the potential for crumbling, the sheer amount of butter involved—it all seemed so overwhelming. This recipe, however, is a game changer. It's a press-in crust, which means no rolling required! This was a huge win for me, saving me valuable time and eliminating a major source of pie-baking anxiety. The peanut flour adds a subtle nutty flavor and a lovely texture, making this crust unique and irresistible. I experimented with different brands of peanut flour, and I found Byrd Mill worked best for me, but feel free to experiment with your preferences. I used Sukrin for the sweetener because of its low-carb count, but other sweeteners would work just fine too.

What truly elevates this recipe is its versatility. The basic crust is so adaptable; you can use it as a base for both sweet and savory pies. I’ve used it for classic apple pie, a decadent chocolate pecan pie, and even a surprisingly delightful quiche. The possibilities are endless! Imagine the rich, nutty crust complementing a creamy pumpkin filling for Thanksgiving, or the satisfying crunch paired with a savory chicken pot pie. The versatility of this crust means that even on the busiest of weeks, I can still create a beautiful and delicious dessert or meal.

The key to success with this crust is to not overwork the dough. Mix the ingredients just until they come together. Overmixing can lead to a tough crust, so gently combine everything and trust the process. Also, don’t forget to chill the crust before baking to ensure a beautifully crisp result. This is also a great recipe for getting the kids involved in the kitchen. My kids love helping to mix the ingredients and press the crust into the pie plate.

Beyond the ease and adaptability, this peanut flour pie crust allows me to indulge in a little self-care. The act of baking, even a simple crust, is a small act of rebellion against the chaos of everyday life. It's a moment to slow down, to focus on something positive, and to create something beautiful and delicious. So, if you're looking for a simple, satisfying, and versatile pie crust recipe that won't derail your busy schedule, look no further. Give this peanut flour pie crust a try – I promise, it’s worth it. And who knows, you might even discover a hidden talent for baking along the way.

I encourage you to get creative and try different fillings. Share your creations with me; I’d love to see what you come up with! Happy baking!
