Crustless Keto Tomato Pie

This is a perfect dish during the summer when all the ingredients are either grown fresh in your garden or you can pick them up at your local farmers market. I have a significant herb garden so I used a variety of fresh chopped herbs, but you could just use basil. You can dig through your cheese drawer to pick a variety of cheeses. I normally use at least two varieties. One of the best tomato pies I made had some smoked Gouda cheese in the mix.

Step-by-step

  • Preheat oven to 350 degrees F.
  • Set a colander in the sink. Slice tomatoes and sprinkle the slices with salt and place them in the colander. Allow the tomato slices to drain for 10 minutes.
  • Chop the onion into nice bite-size pieces and lightly brown them in a pan with olive oil. As the onions cook, chop the herbs and garlic and add to the onions for the last few minutes of cooking.
  • Mix shredded cheeses with mayonnaise together and then add the onion mixture and season with salt and pepper.
  • Spray the bottom of a casserole dish with olive oil or coconut oil. Place one layer of tomato slices on bottom, layer half the cheese mayo mixture in, add another layer of tomato slices and finally top with the rest of the cheese mayo mixture.
  • Bake for 30 minutes or until lightly browned.
  • Scoop out and serve warm. I like it as a vegetable side dish at breakfast, lunch or dinner.

My Summertime Crustless Keto Tomato Pie: A Burst of Garden Freshness

As a busy working mom, finding time to cook healthy and delicious meals can be a challenge. But when summer arrives, and my garden explodes with fresh herbs and tomatoes, I find myself drawn to simpler recipes that let the natural flavors shine. This Crustless Keto Tomato Pie is one of those recipes. It's quick, easy, and tastes unbelievably fresh – perfect for a busy weeknight or a relaxed weekend brunch.

The beauty of this recipe is its adaptability. While I love using a mix of fresh herbs from my garden (basil, oregano, rosemary, tarragon, and sage all work beautifully), you can easily simplify it to just basil or whatever herbs you have on hand. The same goes for the cheese; feel free to experiment with your favorite varieties. I often use a combination of cheddar, mozzarella, and maybe some smoked Gouda for a smoky depth. The key is to have fun with it and make it your own. I've even been known to add a sprinkle of red pepper flakes for a little kick!

This pie isn't just delicious; it's also surprisingly versatile. I often serve it as a side dish, alongside grilled chicken or fish, but it's also fantastic as a light lunch or even a unique breakfast option. The combination of juicy tomatoes, savory onions, and creamy cheese is incredibly satisfying, and the lack of crust keeps it light and refreshing. It’s a perfect dish to showcase the bounty of summer, a simple pleasure that elevates even the busiest of days.

Beyond the Recipe: Embracing the Season

For me, cooking isn't just about sustenance; it’s about connection – connecting with my family, connecting with nature, and connecting with my own creativity. Summertime cooking is particularly rewarding, as the abundance of fresh produce allows me to create simple, yet flavourful meals with minimal effort. The process of harvesting herbs from my garden, choosing ripe tomatoes from the farmers market, and assembling this pie is a mindful experience that slows me down and allows me to fully appreciate the flavors of the season.

This recipe is more than just a pie; it's a celebration of summer’s gifts, a testament to the power of fresh, simple ingredients, and a reminder to take a moment to savor the little things in life. And for a busy working mom like myself, that's a truly priceless recipe.

Tips for Success:

  • Don't skip the salting and draining of the tomatoes: This step helps remove excess moisture and prevents a soggy pie.
  • Use high-quality mayonnaise: A good mayonnaise adds richness and flavor to the filling.
  • Get creative with your cheeses: Experiment with different types to find your perfect combination.
  • Adjust baking time as needed: Oven temperatures can vary, so keep an eye on your pie to ensure it's cooked through and lightly browned.

So, this summer, try this Crustless Keto Tomato Pie and let the vibrant flavors of the season brighten your day. It's a recipe for both deliciousness and mindful living – a perfect combination in my book!
