Step-by-step

  • Cook chicken. I like to use boneless skinless chicken breast and boil them with a couple of chicken bouillon cubes. I use a 3 lb. bag of chicken breast to get the 5 cups. A whole chicken may be used.
  • Toast almonds. Place almonds on a cookie sheet in a 350 degree F. oven for 15 minutes. Turn at least 3 times while in oven and watch closely.
  • Combine chicken, celery, grapes, water chestnuts, mayonnaise, curry powder, soy sauce, lemon juice and toasted almonds. I like to mix by hand, slowly turning the ingredients.
  • Salt and pepper to taste.
  • Refrigerate for 2 hours.
  • Serve on bread or croissants with a piece of lettuce. The serving amount for this recipe will vary depending on the size of bread and croissants you use. You can easily get 12 full sized sandwiches.
  • Enjoy!
My Crunchy Chicken Salad Recipe

A Crunchy Chicken Salad for Any Occasion

As a busy working mom, I'm always on the lookout for recipes that are both delicious and easy to make. This Crunchy Chicken Salad fits the bill perfectly. It's a versatile dish that can be served as a light lunch, a satisfying snack, or even a main course for a casual dinner party. The best part? It’s incredibly customizable! I've been making variations of this salad for years, adapting it to whatever ingredients I have on hand or whatever my family is craving that day. Sometimes I'll add a handful of chopped pecans instead of almonds, other times I might swap the green grapes for dried cranberries for a burst of tart sweetness. The possibilities are truly endless!

The key to this recipe is the perfect balance of textures and flavors. The crisp celery and water chestnuts provide a delightful crunch, contrasting beautifully with the juicy chicken and sweet grapes. The creamy mayonnaise base is enhanced by the warm spices of curry powder and the subtle savory notes of soy sauce and lemon juice. And of course, the toasted almonds add a wonderful nutty flavor and satisfying crunch to every bite. This salad isn't just about taste; it's also about the feeling of satisfaction you get from creating something delicious and nourishing for yourself and your loved ones. The preparation is simple enough for even a beginner cook to handle, and the result is a dish that feels both special and effortless.

What I love most about this salad is its adaptability. On a hot summer day, it's refreshingly cool and satisfying. On a chilly evening, it can be a comforting and hearty meal, especially when served on crusty bread or warm croissants. The preparation itself is quite therapeutic for me. It’s a welcome break from the stress of everyday life, and it's a chance for me to create something delicious and enjoyable for myself and my family.
