Step-by-step

  • PREHEAT OVEN at max for about 10-15 minutes.
  • Cut a piece of aluminium foil, big enough to be able to pack the fish in it and be covered completely.
  • Rub the fish very good with seasoning and if you have time leave it like this for about 15-20 minutes.
  • Cut all vegetables and mix them together with 1 TBS olive oil (just to soften them a little). Add all vegetables on top of fish, under and in the middle and sprinkle the olive oil on top of everything.
  • Cover the fish completely in foil and put it in the preheated oven for 20 minutes.
  • After this time, open the foil on top (just so you can see the fish) and let him bake for about 5-7 minutes more.
  • My favourite side dish for this fish is mash potatoes, Oli's style. Find the recipe on my account.
  • Enjoy!
Aluminum foil is non-negotiable for this method, acting as a vessel that traps steam to cook the delicate flesh evenly before the final browning stage. High radiant heat is required, meaning the oven must be preheated to maximum for at least 15 minutes prior to insertion. Without that thermal shock, the fish will release too much liquid too slowly, boiling in its own juices instead of roasting inside the sealed pouch. Wrapping must be airtight; any gaps in the foil will allow the aromatics to dry out prematurely, leaving the garlic and onions scorched rather than tender.

Managing the Foil Enclosure

Moisture management dictates the success of cooking a whole fish in a sealed envelope. Tossing the sliced mushrooms, bell peppers, and onion rings in precisely one tablespoon of olive oil coats their cellular walls, preventing them from fusing to the aluminum during the initial 20-minute steam phase. Opening the foil packet for the final five to seven minutes allows accumulated vapor to escape, shifting the cooking environment from wet heat to dry heat so the skin can tighten and develop texture. Scaling down the oven temperature during this uncovered window is a mistake; maintain maximum heat to achieve proper surface dehydration without overcooking the interior muscle fibers.

Seasoning Adhesion and Penetration

Dry spice rubs applied to raw fish skin slide off immediately without an intermediary binder. Massaging the seasoning blend directly onto the damp surface of the clean fish and letting it rest for 15 to 20 minutes permits the salt to dissolve and draw surface proteins into solution, creating a tacky substrate that holds the spices during handling. If commercial spice blends are unavailable, substitute an equal part mixture of ground coriander, black pepper, and dried thyme, ensuring fine granulation so the particles adhere evenly across the entire surface area.
