Step-by-step

  • Preheat oven to 350 degrees
  • Shake salt and pepper on the bottom of a large cookie sheet (the type that has a lip around the edge so juices won't spill off.)
  • Place pork chops down an inch or two apart.
  • Lightly salt and pepper each pork chop
  • Spread 1 tbsp of pesto sauce on each pork chop. I like to put the spoonful on each pork chop before I start spreading so I don't risk putting a contaminated spoon back in the pesto jar since I will have pesto leftover.
  • Once Pesto is spread evenly on the top of each pork chop sprinkle them generously with the shredded Parmesan cheese.
  • Place the seasoned pork chops in the oven and bake at 350 degrees for 45-60 minutes. Depending on how thick the pork chops are they may need the whole 60 minutes. Mine cooked for 50 minutes.
  • Serve warm with pasta or potatoes.
Pesto Parmesan Pork Chops - A Weeknight Winner

My Go-To Weeknight Dinner: Pesto Parmesan Pork Chops

As a busy mom, finding quick and delicious meals that the whole family enjoys can feel like a constant search. Between school pick-ups, after-school activities, and the never-ending cycle of laundry, dinner often falls into the "something quick and easy" category. But let's be honest, "quick and easy" doesn't always translate to "delicious and satisfying." That's where this recipe for Pesto Parmesan Pork Chops steps in. It's a lifesaver on busy weeknights, requiring minimal prep time and delivering maximum flavor.

I stumbled upon this recipe a few months ago, and it's quickly become a family favorite. The combination of savory pork chops, vibrant pesto, and salty Parmesan cheese is simply irresistible. It's incredibly versatile too. One night, we'll serve it with a side of roasted vegetables; another night, it might be paired with a simple pasta salad. The possibilities are endless! The beauty of this dish lies in its simplicity. No complicated techniques or obscure ingredients are required. Even my kids, who are notoriously picky eaters, happily devour these pork chops.

What I love most about this recipe:

  • Speed: The prep time is incredibly short, making it perfect for busy weeknights.
  • Flavor: The pesto and Parmesan add a burst of flavor that elevates a simple pork chop into something truly special.
  • Versatility: It pairs well with a variety of sides, making it easy to customize to your family's preferences.
  • Ease of cleanup: Since it's baked, there's minimal mess to clean up afterwards.

Beyond the practical aspects, this dish holds a special place in my heart because it's a reminder that even amidst the chaos of everyday life, there's always time for a delicious and satisfying meal. It’s a testament to the power of simple ingredients combined thoughtfully. And honestly, seeing my family happily enjoying a meal that I prepared with love and minimal fuss is the best feeling in the world.

Ingredients you'll need:

  • Salt and pepper
  • 6-8 pork chops (I prefer boneless)
  • 8 tablespoons pesto sauce (I use Classico brand)
  • 1 cup shredded Parmesan cheese

This recipe is more than just a meal; it's a symbol of the balance I strive for in my life. It's proof that you can enjoy delicious food without sacrificing precious time or energy. So, if you’re looking for a weeknight dinner that’s both flavorful and convenient, give these Pesto Parmesan Pork Chops a try. You won't regret it!

I encourage you to experiment with different types of pesto and sides to create your own unique version of this dish. Perhaps try adding some sun-dried tomatoes or roasted red peppers for extra flavor. Or, if you're feeling adventurous, swap out the Parmesan for another type of hard cheese, such as Asiago or Pecorino Romano. The possibilities are truly endless! Let me know in the comments how your version turns out.

Happy cooking!
