Step-by-step

  • Pour half of enchilada sauce in slow cooker.
  • Add roast beef.
  • If roast beef has already been cooked, cook for 3-4 hours on low. If roast beef has not been cooked already cook for 4 hours on high.

  • Pour over enchiladas.
  • Sprinkle with additional shredded cheese.
  • Cover with aluminum foil.
  • Bake at 375 degrees for about 45 minutes or until heated through and bubbly.
