Pan-fried Basa Fillet with Chilli and Coriander Salsa

Another day and another fish! The kids will eat fish, but it isn't their favorite. So I tend to feed my love for it when they visit their mum. Although I cooked this for myself, I have listed the ingredients and directions for two people to make it easier to work out for you.

My Simple Weeknight Fish Dinner

As a busy working mom, finding time to cook a healthy and delicious dinner can be a real challenge. I often find myself juggling work deadlines, school pick-ups, and the never-ending household chores. The last thing I want to spend hours on is a complicated recipe. That's why I love simple recipes like this pan-fried basa fillet with chilli and coriander salsa. It's quick, easy, and packed with flavor – perfect for a busy weeknight.

This recipe is a lifesaver when I'm short on time. The entire process, from prepping to plating, takes less than 30 minutes. I often make extra and have leftovers for lunch the next day. It's also incredibly versatile. I can easily adjust the spice level depending on my mood or my family’s preference. Sometimes, I'll add a squeeze of lime juice for extra zing, or swap the coriander for parsley if I don’t have any on hand. The beauty of this recipe is in its adaptability. The simplicity of the recipe allows for quick modifications based on what’s in my fridge and what we’re craving.

The Basa: I choose basa because it’s a mild-flavored, flaky white fish that's readily available and relatively inexpensive. It cooks quickly and absorbs flavors well, making it an ideal choice for a weeknight dinner. The pan-frying method gives it a lovely crispy exterior while keeping the inside moist and tender. This dish isn't just about speed and convenience though; the flavors are amazing. The combination of the slightly spicy salsa and the delicate basa is truly delicious. It's a vibrant burst of flavor that’s surprisingly satisfying.

The Salsa: The chilli and coriander salsa is the star of this dish. It’s bright, fresh, and adds a lovely kick. The combination of fresh coriander, red chilli, and a hint of lime juice creates a perfect counterpoint to the mild basa. I love how easy it is to make; simply chop the ingredients and mix them together. It's a delicious condiment that can be used on various dishes, so I often make a larger batch and keep it in the fridge for later use. I might add it to grilled chicken, fish tacos, or even use it as a topping for scrambled eggs.

The Potatoes: The simple boiled and lightly crushed potatoes are the perfect accompaniment to the fish. They're soft, fluffy, and absorb the flavours of the garlic and olive oil beautifully. They add a lovely heartiness to the dish and help to balance the spiciness of the salsa. I often use new potatoes because they have a lovely waxy texture that holds their shape well after boiling. But any small potato will work wonderfully in this dish.

This pan-fried basa fillet with chilli and coriander salsa is a recipe I often turn to when I'm short on time but still want a satisfying and healthy meal. It's a testament to the fact that delicious food doesn't have to be complicated or time-consuming. With a few simple ingredients and a little bit of effort, you can create a delicious and vibrant meal that your family will love. Give it a try and let me know what you think!
