Step-by-step

  • Preheat oven 400F
  • Sprinkle turkey with salt & pepper.
  • In large oven safe skillet, heat oil over medium-high heat.
  • Add turkey and cook 3-4 min turning occasionally to brown all sides
  • Place skillet in oven. Bake 11 to 13 minutes until turkey looses its pink color.. or temp reaches 165. Transfer to cutting board.
  • Meanwhile from 2 clementines or 1 orange squeeze about 1/3 cup juice. Peel remaining clementines or orange into segments.
  • Place same skillet over med/low heat. Add vinegar, clementine wedges and clementine juice. Cook 2 minutes or until segments are soften, stirring to loosen any browned bits in the bottom of the skillet. Add butter and honey and cook just until sauce thickens, stirring constantly.
  • To serve, slice turkey diagonally into 1/2 thick slices, spoon orange segments and sauce over turkey.
