Keto Butter Chicken

Whenever I am out for dinner with friends Butter Chicken is a go-to Indian classic, in fact whenever I have been out to an Indian restaurant I must confess I dont stray far from this delicious dish. To make this Butter Chicken more Keto friendly, we have used Heavy Cream in total substitute for Yoghurt, saving you around 12g of carbs, we havent used any crushed tomatoes, rather tomato paste. Of course a Saffron rice is incredible with any classic Indian masterpiece, however our Keto Mash did the trick quick nicely, soaking up all of the fabulous buttery sauce!

Step-by-step

  • Season the Chicken with Salt and Pepper, heat a large frying pan to medium-high heat.
  • Add 3 Tablespoon of butter in the pan and when hot add the chicken.
  • Cook for 5 minutes, turn and cook for a further 2 minutes.
  • Remove the chicken from the pan including the juices and set aside on a plate
  • Add 2 Tablespoons of Butter to the pan the chicken was in, once hot add the Onion and Garlic and cook for approximately 3 minutes or until soft.
  • Add the Chilli Flakes, Garam Masala, Minced Garlic, Turmeric stirring constantly for 30 seconds, ensuring you dont burn the spices
  • Add 1/2 Cup of Chicken stock, and use a wooden spoon or spatula to scrap up all of the bits stuck to the pan, continue to do this until the pan has been deglazed.
  • Add the remaining stock, once deglazed return the chicken to the pan and bring to the boil, reduce the heat and simmer for 15 minutes
  • Scoop out some of the liquid and whisk the Tomato Paste, add to the pan with the chicken, stir in the Heavy Cream and allow to simmer for a further 15 minutes or until the chicken is cooked through.
