I love the spice combinations of classic Moroccan cuisine. When I found this dish in one of my favorite chicken cookbooks I had to try it, as presented this is the recipe with my modifications. It's a true lifesaver, a vibrant and exotic dish that’s surprisingly quick and easy to prepare, even on the busiest of evenings.

The magic of this recipe lies in the incredible blend of spices. The warm, earthy notes of ginger, cumin, and coriander dance beautifully with the subtle sweetness of orange juice. The fennel adds a pleasant anise-like fragrance and a satisfying crunch, while the red onion provides a delightful sharpness that cuts through the richness of the chicken. It's a symphony of flavors that transports you to a bustling Moroccan souk, even if you’re just in your own cozy kitchen. And the best part? My kids love it! They often ask for seconds, which is always a win in my book. The tender chicken, perfectly seasoned and infused with aromatic spices, pairs wonderfully with the fluffy couscous.
