Step-by-step

  • Line a 9x12 pan with parchment paper.
  • Melt the dark chocolate (use the method you prefer, either double boiler, or microwave - cook 30 seconds in a heat-proof bowl, stir and repeat until you have a smooth consistency).
  • Pour the melted dark chocolate on the parchment paper, spread the chocolate out until it is about 1/3" thick. You can do this by hitting the pan on the countertop repeatedly, or maybe you could use a spatula to spread the chocolate.
  • Melt the white chocolate, using the steps above.
  • After the chocolate is smooth, pour it on top of the dark chocolate - trying to make the layers the same thickness. (it's best to do this step while the white chocolate is still very soft -- I've had them separate when I broke them into pieces, I think the layers "stick" together better if the white chocolate has not hardened).
  • Unwrap the starlite mints, or peppermints of your choice and put them into a heavy duty ziplock bag.
  • Using a hammer or meat tenderizer - crush the mints then, while the white chocolate is still melted sprinkle on top.
  • Let the chocolates harden in the refrigerator for 2 hours, then break the candy into pieces.
  • This needs to be stored in the refrigerator if you live in a warm/humid climate.

My Festive Chocolate Peppermint Bark: A Holiday Tradition

The holiday season is my absolute favorite time of year. The twinkling lights, the cozy gatherings, the delicious aromas filling the air – it's pure magic! And what better way to celebrate than with a homemade treat that's both beautiful and delicious? This year, I'm sharing my recipe for Chocolate Peppermint Bark – a festive candy that's as easy to make as it is delightful to eat. I've been making this for years, perfecting it each time. It's become a cherished tradition in my home, and I'm so excited to share it with you.

This recipe isn't just about following instructions; it's about the process, the joy of creating something special. The scent of melting chocolate is intoxicating, and the satisfying crunch of the peppermint candy is pure delight. It’s more than just a candy; it’s a symbol of the warmth and love I pour into everything I make during the holidays. I often make several batches – one for us to enjoy, and others to give as gifts to friends and family. The look on their faces when they receive such a thoughtful, handmade present is priceless. The beauty of this recipe is in its simplicity. It’s a recipe that even the most novice baker can handle, creating a stunning dessert that looks like it came from a high-end chocolatier.

The rich dark chocolate provides a decadent base, complemented perfectly by the creamy white chocolate and the refreshing burst of peppermint. The contrast in textures – the smooth, creamy chocolate against the crunchy peppermint – is simply irresistible. I like to use high-quality chocolate; it makes all the difference. Ghirardelli is a personal favorite, but feel free to experiment with your preferred brand. And when it comes to the peppermint, I've tried different types, but I always come back to the classic starlight mints. They give the perfect level of sweetness and minty freshness. The key is to not over-crush the mints; you want some larger pieces for that satisfying crunch.

Beyond the ingredients themselves, the process is a big part of the fun. Melting the chocolate is therapeutic in itself; the smooth, glossy finish is so satisfying to watch as it slowly fills the pan. Then, there’s the delightful sound of the crushed peppermint hitting the top of the chocolate. This simple process transforms these individual ingredients into a beautiful dessert perfect for the holidays. It’s a recipe that encourages creativity. Some years I’ve used different colored chocolate, added festive sprinkles, or even swapped the peppermint for other candies. The possibilities are endless, and that’s half the fun!

So, gather your ingredients, put on some festive music, and let's make some magical Chocolate Peppermint Bark together. It’s not just a candy; it's an experience, a memory in the making, a taste of the holidays wrapped in a beautiful, delicious package. Enjoy the process, enjoy the outcome, and enjoy the company of those you share it with. Happy holidays!

Tips for Success:

  • Use high-quality chocolate for the best flavor and texture.
  • Don't overheat the chocolate, or it will seize up.
  • Work quickly when spreading the chocolate to prevent it from hardening too quickly.
  • Store the bark in the refrigerator to keep it fresh, especially in warmer climates.
  • Get creative with your toppings! Try adding different types of candies, nuts, or sprinkles.

This Chocolate Peppermint Bark is more than just a recipe; it's a celebration of the holiday season, a testament to the simple joys of baking, and a delicious way to spread cheer to everyone you know. Happy holidays!
