Step-by-step

  • Preheat oven to 350 degrees. Grease a 9X13 pan with cooking spray. Set aside.
  • Begin making crust. Mix together gluten free flour, almond flour, powdered sugar, and salt in a medium sized mixing bowl.
  • Cut in butter with a pastry cutter until small pea sized pieces of dough form. Dough will be crumbly and somewhat dry at this point.

  • Bake at 350 degrees for 18 minutes.

  • Begin making filling. Whisk all filling ingredients together until smooth.

  • Remove from oven and set on cooling rack. Allow to cool to room temperature.

Gluten-Free Lemon Bars: A Burst of Sunshine on a Plate

My Sunshine on a Plate: Gluten-Free Lemon Bars

As a busy working mom, finding time to bake is a luxury, not a given. But sometimes, the craving for something sweet and tangy hits just right. That's when my trusty Gluten-Free Lemon Bar recipe comes to the rescue. These aren't just any lemon bars; they're a little slice of sunshine, perfect for sharing (or not!). The beautiful, vibrant yellow of the filling is enough to brighten even the dreariest of days, and the zesty lemon flavor is a refreshing contrast to the sweet, buttery crust. It's the perfect treat for after-work relaxation, a weekend brunch, or a special occasion – they’re always a hit!

The best part? These bars are surprisingly easy to make. The recipe is straightforward, the ingredients are readily available, and the results are absolutely divine. I love the combination of the delicate, crumbly crust and the creamy, intensely lemony filling. It's a perfect balance of textures and flavors that always leaves me wanting more. And the fact that they're gluten-free is just a bonus – everyone can enjoy them, even those with dietary restrictions. I've even fooled some gluten-loving friends, who swore they couldn't tell the difference! The secret lies in using a good quality gluten-free flour blend. Experimenting with different brands can lead to slightly different textures. My personal favorite produces a lovely, tender crust.

Beyond the Recipe: These lemon bars have become more than just a recipe for me; they're a symbol of simple joys and shared moments. I've baked them for potlucks, office parties, and even just a quiet evening at home with my family. The act of baking itself is therapeutic for me, and the joy of sharing my creations makes it all the more worthwhile. Whether it's the aroma filling the kitchen, the satisfaction of a perfectly golden crust, or the happy faces of those who enjoy them, these lemon bars are a reminder to savor the little things and appreciate the simple pleasures in life.

Tips and Tricks for Lemon Perfection:

  • Fresh is Best: Use freshly squeezed lemon juice for the most vibrant flavor. The difference is truly remarkable!
  • Don't Overbake: Overbaking can lead to a dry crust and a tough filling. Keep a close eye on the bars during the final stages of baking.
  • Cool Completely: Allow the bars to cool completely before cutting. This prevents them from crumbling and ensures clean, neat squares.
  • Storage Solutions: Store leftovers in an airtight container in the refrigerator to maintain their freshness. They’ll stay delicious for up to a week.
  • Get Creative with Decorations: Sprinkle with powdered sugar, fresh berries, or even a drizzle of lemon curd for an extra touch of elegance.

Baking these Gluten-Free Lemon Bars is more than just making a dessert; it's about creating a moment of happiness, a shared experience, and a delicious taste of sunshine. And for a busy working mom like me, that’s something truly special.
