Step-by-step

  • Grate 1 tomato. Mix it with the uncooked rice.
  • Also mix in 1 tbsp tomato paste, parsley, ground paprika, pepper and salt. Add a little more pepper and salt than you would normally do, otherwise the rice mixture will be too bland.
  • Clean the peppers. Cut off the top of the pepper and remove the seeds carefully.
  • Stuff the peppers with the rice mixture (you fill the peppers with uncooked rice).
  • Cut a tomato into slices; you are going to use this as a lid on top of the peppers. If the slices are too big, it is best to remove the seeds and to cut a slice into a few pieces. You use the pieces as a lid on the peppers.
  • Arrange the peppers side-by-side on the bottom of a saucepan. Make sure you use a pan that can just fit all the peppers. If there is empty space between the peppers, they will start to float and you want to avoid that.
  • Mix 1 tbsp tomato paste with 150 ml hot water, 1 tbsp olive oil and a pinch of salt. Pour this into the pan with the peppers.
  • Add boiling water until the peppers are just under water.
  • Put the pan on the stove and bring to a boil.
  • Leave the peppers to boil for about 30 minutes, until the rice inside the peppers is cooked.
  • Serve and enjoy! I love eating those with some lactose-free yoghurt on the side.

A Taste of Turkey: My Favorite Stuffed Pepper Recipe

As a busy working mom, finding time to cook a healthy and delicious meal can sometimes feel like a Herculean task. But, let me tell you, this recipe for Stuffed Peppers with Rice (Turkish Biber Dolmasi) is a game-changer. It’s a dish that's both satisfying and surprisingly simple to prepare, even on a weeknight. It's become a staple in our home, a comforting reminder of warm evenings and family gatherings. The vibrant colors, the aromatic spices, and the satisfyingly tender rice within the peppers – it's a feast for the senses.

The beauty of this recipe lies in its versatility. You can easily adjust the spices to your liking – a little more paprika for a richer flavor, a dash of cumin for an earthier note. I often experiment with different herbs, sometimes adding a sprig of fresh mint or a sprinkle of oregano. The peppers themselves are equally adaptable; I've used a mix of red and green peppers for a more visually appealing dish. But honestly, the classic green peppers are my personal favorite; they provide a wonderfully mild sweetness that perfectly complements the savory rice filling.

What I love most about this dish is its ability to transport me. Each bite is a little journey, taking me back to bustling Turkish markets, the scent of spices filling the air, and the warmth of family meals shared around a table laden with delicious food. It’s a taste of home, a connection to a culture I’ve always admired, all from the comfort of my own kitchen. And the best part? It's a recipe I can easily share with my family and friends, bringing a little bit of that Turkish warmth to their tables, too. The leftovers are also amazing – perfect for a quick lunch the next day, perhaps heated gently in the microwave and topped with a dollop of plain yogurt.

This is more than just a recipe; it's a culinary adventure, a chance to explore flavors and create something truly special. So, gather your ingredients, put on some music, and let the aroma of spices fill your kitchen. You might just surprise yourself with how easy and delicious this truly is. It's a guaranteed crowd-pleaser, perfect for a casual weeknight dinner or a more formal gathering.

Beyond the Recipe:

This recipe's simplicity makes it a great base for experimentation. Try adding different meats, like ground lamb or beef, to create a heartier dish. Or, for a vegetarian twist, consider incorporating lentils or chickpeas into the rice mixture. The possibilities are endless! And don't be afraid to get creative with the presentation. A simple garnish of fresh parsley or a drizzle of olive oil can elevate the dish to new heights.

For me, cooking is more than just preparing a meal; it's about creating memories, sharing experiences, and connecting with loved ones over a delicious meal. This recipe has done just that for our family, and I hope it brings the same joy to your kitchen.
