Step-by-step

  • Preheat oven to 325 degrees.
  • Grease and prepare the brownie pan and set it aside.
  • In a bowl, mix the pumpkin cheesecake swirl ingredients together until mixed thoroughly. Set aside.
  • Melt chocolate chips in microwave for a minute, stirring after to see if chips have melted. If not, microwave in increments of 30 seconds until completely melted. Alternatively, you can melt in over a small pot of boiling water (Not a lot of water in the pot) and put the chocolate chips it in a heat proof and melt proof bowl over the pot and stir until melted.
  • In a medium bowl, whisk the flour, salt and baking soda until combined. Set aside.
  • In a separate bowl, add the flax eggs or egg replacement, coconut sugar and coconut oil and mix until combined for about 2 minutes. Add the water and the vanilla extract. Add to the dry mixture to the wet mixture and melted chocolate chips and stir for about 3 minutes until combined.
  • Pour into a greased, parchment lined, or a greased foil-lined 8x8 square pan.
  • Dollop the pumpkin cheesecake swirl mixture on top of the brownies. I like to do it in huge circles that don't touch all over the batter, then slowly using a knife, swirl left to right from top to bottom through the batter, up and down from right to left to get the swirl through the whole batter. Don't over do it or you'll just get a muddle.
  • Bake for 45 minutes. The centre might still be a bit wobbly. When finished, remove from oven carefully and allow to cool completely until room temperature, then place into fridge for at least two hours. It's also easier to cut once cold.
  • Slice, serve and enjoy! Store these brownies in the fridge because of the cheesecake part.

My Unexpectedly Delicious Vegan Pumpkin Cheesecake Swirl Brownies

As a busy working mom, finding time to bake is a luxury, not a given. My days are filled with conference calls, school pick-ups, and the never-ending cycle of laundry. So, when I stumbled upon this recipe for Vegan Pumpkin Cheesecake Swirl Brownies, I was initially hesitant. Vegan? Brownies? Cheesecake swirl? It sounded too ambitious, too complicated for my already overflowing schedule. But, the picture looked unbelievably decadent, and a tiny part of me, the part that still craves a little indulgence after a long day, decided to give it a try.

I'll be honest, I was skeptical. I'm not exactly a baking expert, more of a "throw-it-together-and-hope-for-the-best" kind of cook. But, to my astonishment, the recipe was surprisingly straightforward. The instructions were clear, the ingredients readily available, and, most importantly, the result was phenomenal. The brownies were fudgy, rich, and intensely chocolatey. The pumpkin cheesecake swirl added a delightful tang and a creamy texture that perfectly complemented the deep, dark chocolate. It was the perfect balance of sweet and savory, decadent and comforting.

The best part? My kids devoured them. They usually aren't fans of anything remotely healthy, let alone vegan, but these brownies were a hit. Even my husband, who's not exactly a dessert enthusiast, went back for seconds. This is a testament not only to the recipe's deliciousness but also to the ease with which it was made. I managed to bake these amazing brownies in between client meetings and bedtime stories, proving that even the busiest of moms can find time for a little self-indulgence (and a delicious treat for the family).

Adapting for my lifestyle: I’ve found that this recipe is incredibly versatile. I’ve experimented with different types of flour, and substituted ingredients based on what I had available. The beauty of this recipe is its flexibility; it adapts to your needs and your available ingredients.

Beyond the kitchen: The success of these brownies has also inspired me to experiment more in the kitchen. It's given me the confidence to try new recipes, to explore different flavors, and to discover new ways to bring joy into my daily routine. It’s a small victory, but one that resonates deeply in my busy life. It shows me that even small moments of creativity and self-care can make a big difference.
