Step-by-step

  • Place each ear of corn in a piece of aluminum foil (about 12").
  • Add 1/2 tablespoon butter, salt and pepper to taste.
  • Fold aluminum foil by bringing 2 long edges of foil together. Fold them over until you reach the corn. Then, pull sides of foil up to center top.
  • Place corn in the crockpot with the seam side up.
  • Repeat until corn is all wrapped.
  • Pour 1/2 cup water in the bottom of the crockpot.
  • Cook on high for 2 hours or low 4-5 hours.
  • Once corn is done cooking, reduce temperature to warm for up to 2 hours, until ready to serve. Add a splash more water if needed longer than that.
  • You can mix butter, salt and pepper in a small mixing bowl and dollop about 1/2 tablespoon on each ear of corn.
  • You can use your favorite spice mixture to kick up the flavor.
  • If you add spices, be sure to smear butter mixture on the corn or you will end up with a pile of spices on the corn when you open it.
  • If you are watching what you eat, brush lightly with coconut oil or extra virgin olive oil instead.
Crockpot Corn on the Cob: A Busy Mom's Delight

Crockpot Corn on the Cob: My Secret to Easy Weeknight Dinners

As a busy mom of three, finding time to cook a healthy and delicious meal can feel like a Herculean task. Between school drop-offs, work deadlines, and soccer practice, the last thing I want to do is spend hours in the kitchen. That's why I've become a huge fan of crockpot cooking. It's simple, it's hands-off, and it allows me to create flavorful meals without sacrificing my sanity (or my precious free time). And one of my absolute favorite crockpot recipes? Crockpot corn on the cob. It's unbelievably easy, incredibly tasty, and always a crowd-pleaser with my family.

This recipe is a lifesaver on busy weeknights. The beauty of it lies in its simplicity. No complicated techniques, no fancy ingredients – just fresh corn on the cob, a little butter, salt, pepper, and the magic of your crockpot. The slow cooking process allows the corn to become incredibly tender and juicy, capturing all that sweet corn flavor. I've experimented with different spices over time – sometimes I add a touch of cayenne for a little kick, other times I stick with the classic butter, salt, and pepper combination. The possibilities are endless!

Why this recipe is perfect for busy people:

  • Minimal prep time: Shucking the corn and wrapping it in foil takes only a few minutes.
  • Set it and forget it: Once the corn is in the crockpot, you can walk away and let it cook. No need to constantly monitor or stir.
  • Versatile: You can easily adapt the recipe to your taste by adding different spices or herbs.
  • Perfect for meal prepping: Make a big batch on the weekend and enjoy delicious corn on the cob throughout the week.

I often make a double batch on Sundays, and the corn is just as delicious the next day, or even reheated later in the week. It’s a great addition to barbecues, potlucks, or just a simple weeknight family dinner. The flavor is unmatched, especially when you combine the sweetness of fresh corn with the creamy texture from the butter and the added saltiness and pepper. And let's be honest, the cleanup is a breeze – just toss the foil and wipe down the crockpot. For a mom like me, that's worth its weight in gold.

Beyond the ease and deliciousness, I love that this recipe allows me to enjoy fresh, seasonal produce without feeling overwhelmed. Summer corn is at its peak during the summer months, making this recipe an ideal way to utilize the bounty of the season. Plus, the kids love it, which always makes cooking a little more enjoyable. It’s a win-win situation all around. The beautiful thing is, you can adapt this recipe to suit your own preferences and dietary needs. If you want to make it a healthier option, you could try using coconut oil or olive oil in place of butter. Or perhaps experiment with different spice combinations. You can even add other vegetables to the crockpot for a complete meal – zucchini, bell peppers or even onions would be an easy addition.

So, next time you're looking for an easy, delicious, and stress-free dinner recipe, give my crockpot corn on the cob a try.
