As a busy working mom, time is always of the essence. Juggling work deadlines, school pick-ups, and keeping a household running smoothly leaves little room for elaborate meal preparations. That's why I've developed a repertoire of quick, easy, and delicious recipes that always come to the rescue. One of my absolute favorites is this Pepper Babycorn Masala. It's surprisingly simple, yet the flavor is anything but. The vibrant spices create a delicious semi-dry stir-fry that's perfect for a weeknight dinner or an impromptu gathering. I can whip it up in under an hour, leaving me plenty of time to focus on other things – like catching up with my family or finally getting that pile of laundry done!

The beauty of this recipe lies in its versatility. It's fantastic as a starter, served with some warm naan bread or papadums. Alternatively, it makes a wonderful side dish accompanying rice or chapatis. It's also incredibly adaptable. Feel free to adjust the spice level to your liking. If you prefer a milder dish, simply reduce the amount of chili powder. Or, if you're feeling adventurous, add a pinch of cayenne pepper for an extra kick. I've found that the key to a successful Pepper Babycorn Masala is a good quality garam masala. A blend with fresh, aromatic spices will elevate the dish significantly. Don't be afraid to experiment with different spice combinations to find your perfect balance.

The ingredients themselves are readily available at most grocery stores. Baby corn, onions, ginger, garlic – all pantry staples.
