Step-by-step

  • Preheat the oven to 425°F.
  • Cut squash in half lengthwise.
  • Scoop out the seeds (and save for roasting).
  • Rub flesh of squash lightly with olive oil and season with salt and pepper.
  • Place cut side down on parchment-lined baking sheet, and roast until tender, 30 to 45 minutes depending on the size of the squash.
  • Set aside to cool.
  • Place stock in a small saucepan and heat over medium heat so that it's hot but not simmering.
  • Meanwhile, in a large, wide sauté pan, melt the butter over medium heat.
  • Add the onion and cook until it's translucent, about five minutes.
  • Add the garlic, and cook for another minute.
  • Add the farro and cook stirring constantly for another minute.
  • Add the wine and let it reduce until it's nearly gone.
  • Add 1/2 cup of the warm stock, reduce the heat to medium, and stir until the liquid is almost absorbed.
  • Continue cooking, adding 1/2 cup of warm stock at a time, stirring to prevent scorching and letting each addition be absorbed before adding the next, until the farro grains have expanded and are al dente, about 1 hour.
  • Meanwhile, purée the flesh of the squash (discard the skin) with enough stock until it's a smooth, silky consistency.
  • Meanwhile, prepare the kale: remove the stems and ribs from the leaves. Make stacks of the leaves, roll them into cylinders, and cut them into very thin ribbons. Wash and dry the kale if necessary.
  • Stir one cup of the squash purée into the risotto.
  • Add a handful of the thinly sliced kale strips and stir until the kale is wilted.
  • Add more kale to taste.
  • Add the remaining 2 tablespoons of butter and the cheese.
  • Stir, taste, adjust seasoning, and serve.
A Cozy Autumn Evening: My Farro Risotto Recipe

A Cozy Autumn Evening: My Farro Risotto Recipe

The air is crisp, a gentle breeze rustles the leaves outside my window, and the scent of roasting squash fills my kitchen. There's nothing quite like autumn evenings, and tonight, I'm sharing one of my absolute favorite comfort food recipes: Farro Risotto with Squash and Kale. It's the perfect blend of hearty grains, sweet squash, and earthy kale – a symphony of autumnal flavors that warms you from the inside out. I’ve always loved cooking, it's a way for me to de-stress after a long day, a creative outlet, and a way to show my love for my family and friends. This recipe is simple enough for a weeknight dinner, yet elegant enough to impress guests.

The beauty of this risotto lies in its simplicity. It's not your typical creamy Arborio rice risotto, but rather uses farro, a whole grain that adds a lovely nutty flavor and satisfying chewiness. The roasted butternut squash adds a touch of sweetness, while the kale brings a welcome boost of nutrients and vibrant color. The entire dish comes together beautifully, offering a balanced and deeply satisfying meal. I particularly enjoy making this dish because it allows me to use ingredients that are in season. The vibrant colors and the flavors really shine when you are using peak season ingredients. Preparing this is almost meditative for me, the rhythmic stirring, the gradual addition of stock. The whole process is so satisfying.

I often find myself making larger batches of this risotto, as leftovers are equally delicious the next day. Sometimes, I’ll add a poached egg on top for an extra protein boost. It reheats beautifully, and the flavors deepen over time. This adaptability makes it a perfect choice for busy weeknights or for when you want a dish that’s equally enjoyable for dinner and lunch. The versatility of the recipe is something that I love, I can adapt the flavors and vegetables to suit what I have on hand.

Beyond the practicality, this dish holds a special place in my heart. It’s a reminder of cozy evenings spent in the kitchen, surrounded by the warmth of my family and the delicious aroma of home-cooked food. It's a recipe I've perfected over time, tweaking and adjusting to my own tastes, and I’m thrilled to share it with you. So, gather your ingredients, put on some relaxing music, and allow yourself to be transported to a place of comfort and deliciousness. The aroma alone is enough to make you feel warm and cozy, and I am certain this recipe will become a staple in your own kitchen.

Beyond the Recipe: Autumnal Adventures

This farro risotto isn't just a meal; it's a gateway to the full sensory experience of autumn. Imagine yourself enjoying this dish on a crisp evening, wrapped in a cozy blanket, perhaps with a glass of warm apple cider or a comforting cup of herbal tea. The earthy flavors of the farro, the sweet notes of the squash, and the slight bitterness of the kale all intertwine to create a perfect representation of autumn's bounty. I find that this dish complements the autumn atmosphere really well, almost making the meal a part of the season itself.

Perhaps you're planning a weekend trip to a nearby orchard, picking apples and pumpkins. Or maybe you're enjoying a quiet evening at home, curled up with a good book. Whatever your autumnal plans, I encourage you to make this farro risotto a part of it. It's a dish that celebrates the simple pleasures of the season, the comfort of a warm meal, and the joy of creating something delicious from scratch. I always find that the preparation itself is a rewarding process, and the final product makes it all the more worth it.

Sharing the Harvest: A Community Table

The act of cooking, particularly making a dish like this farro risotto, feels almost like a communion. It connects me to the earth, to the farmers who grew the ingredients, and to the people I share it with. This is more than just a recipe; it is a story of seasonal ingredients, hard work and shared moments of happiness. I often invite friends and family to share this dish, creating memories around the dining table. The conversations that spring from these shared meals are what make this dish even more special. Sharing a meal together reminds us of the simple joys of life.
