Step-by-step

  • Mix all seasonings, for the salmon, in a small bowl.
  • Rub salmon with about ½ tablespoon extra virgin olive oil and then seasoning mix (don't forget to rub down the sides of the salmon) (you will not use all of the seasoning mix).
  • Refrigerate salmon at least 30 minutes to allow for seasonings to meld into the flesh of salmon.
  • Meanwhile, combine all crema ingredients in a blender and blend until smooth.
  • In a nonstick pan, add about ½ tablespoon extra virgin olive oil and heat to medium-high.
  • Add the salmon, flesh side down and cook for 3 minutes with lid on the pan.
  • Flip the salmon and cook fish all the way through, about 5 more minutes. (This timing was perfect- you don't want overcooked salmon and it will continue to cook a bit even after removed from heat).
  • Set aside.
  • Heat tortillas in nonstick pan or panini maker until hot on both sides and a little crispy.
  • Top tortillas with slaw/salad mix and fresh cilantro.
  • Divide the salmon among the tortillas and top with avocado crema or guacamole and/or any other favorite taco topping.
  • Enjoy... I know you will! One of my personal favorite recipes on the blog!

As a busy professional, finding time to cook healthy and delicious meals can feel like a Herculean task. Long days at the office often leave me with little energy for elaborate culinary creations. That's why I've developed a collection of quick, easy, and incredibly satisfying recipes that I can whip up even on my most hectic evenings. This recipe for seared salmon tacos with avocado crema is a perfect example. The star of the show is undoubtedly the salmon. I always opt for wild-caught salmon for its superior taste and nutritional value. The quick sear gives it a beautiful crust while keeping the inside perfectly flaky and moist. The avocado crema adds a luscious, creamy texture that perfectly complements the richness of the salmon and the slight spice from the seasoning. I love the versatility of this recipe. Feel free to get creative with your toppings! A crisp slaw mix, fresh cilantro, and a sprinkle of your favorite hot sauce are all fantastic additions. And if you’re feeling adventurous, why not try adding some pickled onions or a mango salsa? The possibilities are endless!

This recipe isn't just about convenience; it's about nourishing my body with healthy, delicious food. Salmon is an excellent source of protein and omega-3 fatty acids, which are essential for brain health and overall well-being. The avocado adds healthy fats and fiber, while the slaw provides a dose of vitamins and antioxidants. It’s a complete and balanced meal that satisfies my cravings without sacrificing my health goals. I often make a double batch on the weekend and store it in the fridge for quick lunches during the work week. It’s just as delicious cold as it is hot!

Beyond the Recipe: This isn't just about a meal; it’s about mindful eating and taking time for myself, even amidst the chaos of a busy life. Cooking, for me, is a form of self-care. The act of preparing food, the aromas that fill my kitchen, and the satisfaction of creating a delicious meal are all small moments of peace and joy in my hectic schedule.
