Step-by-step

  • Preheat your oven to 400F.
  • Into a baking dish or sheet pan add your mixed nuts. Cook for around 15 minutes or until toasted and aromatic.
  • Pulse through food processor for a few seconds. You want them chunky, not like a meal.
  • Into a large pot heat your oil and butter on medium for around 30 seconds.
  • Throw in your onions and cook down for 5 minutes or until translucent.
  • Now add in your celery, pepper, carrot, garlic and mushrooms. Cook for 10 minutes or until the vegetables have softened and the kitchen smells of heaven.
  • Keep pot on medium heat and add in your tomato paste, herbs + spices, bread crumbs and quinoa. Cook for another 5-10 minutes, stirring gently to make sure everything is well combined.
  • Prepare your flax egg or egg replacement and set aside.
  • Remove pot from heat and let it cool for a few minutes before adding the flax egg and cheese of choice. Stir well and watch this beautiful roast come together!
  • Line a 12" L x 6" W x 3" D baking tin with parchment and lightly grease with coconut oil spray.
  • Begin adding your roast mixture into the tin and make sure to pack it down as you go. You really watch everything to be tight and compact. If you do this properly you will end up with a perfect roast shape!
  • Decrease oven temperature to 375F and bake roast in oven, covered with tin foil for around 45 - 50 minutes.
  • Once cooked remove from oven and let it cool in the tin for around 10 minutes before removing and cutting into pieces.
  • Serve with favourite tomato sauce of choice.

My Festive Nut Roast: A Holiday Tradition

The holidays are a time for togetherness, laughter, and of course, delicious food! This year, I decided to shake things up a bit with a festive nut roast that's not only incredibly flavorful but also surprisingly easy to make. As a busy working mom, I always appreciate recipes that are both impressive and time-efficient, and this one definitely fits the bill. Forget the stress of a complicated centerpiece; this nut roast is the perfect showstopper for your holiday table, guaranteed to impress your guests without hours of slaving away in the kitchen.

The inspiration for this recipe came from a desire to create something hearty and wholesome, a satisfying alternative to the usual meat-centric holiday fare. The combination of crunchy nuts, savory vegetables, and aromatic herbs creates a symphony of flavors that perfectly capture the spirit of the season. I love how the nuts add a delightful textural element, providing a satisfying crunch that contrasts beautifully with the tender vegetables and the slightly crumbly quinoa base. The beautiful thing about this recipe is its adaptability; feel free to experiment with different types of nuts or vegetables to create your own unique twist. This recipe is a blank canvas for your culinary creativity!

What I love most about this nut roast is its versatility. It’s equally at home at a sophisticated holiday gathering or a cozy family dinner. The rich, earthy flavors are perfectly complemented by a simple side of roasted vegetables or a vibrant salad. And let's not forget the gravy! A rich and flavorful gravy can really elevate this dish to new heights. I personally recommend a classic mushroom gravy, but feel free to get creative and experiment with different flavor combinations. The possibilities are endless!

Preparation is key to a successful nut roast. Make sure to toast your nuts until they are fragrant and slightly crunchy, this step really enhances their flavor. Don't be afraid to experiment with different types of nuts; walnuts, pecans, and hazelnuts all work wonderfully. When it comes to the vegetables, I prefer to use a combination of finely chopped onions, celery, and carrots for a classic base. The addition of mushrooms adds an earthy depth of flavor and creates a beautifully textured roast. The herbs and spices are equally important, working together to create a complex and savory flavor profile.

One of the most rewarding aspects of cooking is the ability to create something beautiful and delicious from simple ingredients. This nut roast is a testament to that, transforming humble nuts and vegetables into a culinary masterpiece. The process of making this roast is almost meditative, the rhythmic chopping of vegetables, the careful stirring of the mixture, and the anticipation of the final product all contribute to a truly satisfying experience. I encourage you to embrace the joy of creating something special for yourself and your loved ones.

Whether you're a seasoned chef or a kitchen novice, this Festive Nut Roast is a recipe that will undoubtedly become a cherished holiday tradition. It's a dish that evokes feelings of warmth, comfort, and togetherness – the perfect essence of the holiday season. So gather your ingredients, roll up your sleeves, and get ready to create a culinary masterpiece that will impress and delight your family and friends. Enjoy!
