Step-by-step

  • Add the eggs, egg whites, cottage cheese, whipping cream, shredded cheese, salt and pepper to a blender. Blend for 30-45 seconds until well blended.
  • Add 1 cup of water to the Instant Pot. Add the trivet (this comes with the Instant Pot).
  • Carefully, add the baby-food container to the Pot. The baby-food container I used has 9 compartments.
  • Using a ladle, spoon the egg mixture into each of the compartments of the baby-food container.
  • Top with the chopped peppers, onions, and bacon.
  • Cover with the baby container lid.
  • Place the lid on the Instant Pot and seal. Set the Instant Pot to the Steam setting. Cook for 12 minutes.
  • Allow the steam to naturally release for 10 minutes, instead of immediate quick release.
  • Press the release button, open the pot, and remove the container.
  • Allow the egg bites to cool for a few minutes.
  • To remove the bites, carefully push up on the bottom of each. From there, each should slide right out.

My Go-To Keto Breakfast: Instant Pot Egg Bites

As a busy fitness model, time is my most valuable asset. I'm always on the go, juggling photoshoots, training sessions, and trying to maintain a healthy, ketogenic lifestyle. Finding quick and nutritious meals is essential, and that's where these Instant Pot Low-Carb Starbucks Sous Vide Bacon Egg Bites come in. Forget those overpriced coffee shop versions – this recipe is a game changer, allowing me to enjoy a delicious, protein-packed breakfast without sacrificing my time or my macros.

The best part? It's incredibly versatile. I often switch up the veggies based on what's fresh at the market. Sometimes it's spinach and mushrooms, other times bell peppers and onions like in the original recipe. The bacon adds a salty, satisfying crunch that keeps me full until lunchtime, especially important when I'm burning tons of calories in the gym. The process itself is remarkably simple – even simpler than the countless complicated fitness routines I follow! The Instant Pot does most of the work, practically eliminating the hands-on time. It's so convenient I often prep a batch on Sunday to grab and go throughout the week.

I've tried many different keto breakfast options, from protein shakes (which sometimes lack the satisfying texture I crave) to various egg recipes. These egg bites stand out because they’re both portable and incredibly flavorful. The sous vide effect from the Instant Pot creates perfectly cooked eggs, fluffy and moist, every single time. I've never had a dry or rubbery egg bite. The ease of cleanup is also a major plus – a quick wipe-down of the Instant Pot and I'm done. I always make sure to use nitrate-free bacon, focusing on clean and healthy ingredients to support my overall fitness goals. This recipe has become a staple in my diet, and I’m thrilled to share it with you all. I’ve adapted it from what I’ve learned on my journey, balancing deliciousness with health and fitness. You can adapt it, too – it’s incredibly forgiving.

Why This Recipe Works:

  • Speed and Convenience: The Instant Pot drastically reduces cooking time, making it perfect for busy mornings or meal prepping.
  • Macros-Friendly: Low in carbs and high in protein, this recipe is a keto dream come true.
  • Flavorful and Customizable: Feel free to experiment with different types of cheese, vegetables, and even add some herbs for an extra layer of flavor. I like to get creative.
  • Perfect Texture: The sous vide method ensures perfectly cooked eggs with a creamy texture.

This recipe is more than just a breakfast; it’s a lifestyle choice. It's a commitment to fueling my body with healthy, delicious food that helps me reach my fitness goals without sacrificing taste or convenience. Give these egg bites a try – you won't be disappointed.

Tips for Success:

  • Use a good quality blender to ensure a smooth egg mixture.
  • Don't overfill the compartments of the baby food container – leave a little space for expansion.
  • Allowing the steam to naturally release prevents the egg bites from becoming overly firm or rubbery.
  • Experiment with different types of cheese and vegetables to find your perfect combination. It's all about making it your own!
