Step-by-step

  • Chuck all the ingredients into a bowl with a little salt and pepper, then chuck the chicken in and mix together.
  • Cover and chill for as long as you can (overnight is perfect, but a few hours will do).
  • When ready to cook, you simply thread each piece of chicken onto two metal skewers, making sure both skewers go through each bit of chicken.
  • Then pack the meat down as tight as you can.
  • OVEN:- Put the kebab onto a rack over a roasting tin and cook for about 55 minutes at 180, remove cover in tin foil and let it rest for 10 minutes or so whilst you prefer the pittas and salad.
  • BBQ:- Follow the oven instructions above, but after 30-40 minutes Chuck it on the BBQ (no flames), closing the lid for the remaining time and then cover in foil and let it rest for the 10 minutes.
  • Slice strips down the kebab and stuff into lightly toasted pittas and serve with your favourite sauces and salad.
Chicken Kebab: A Family Favorite Recipe

My Go-To Chicken Kebab Recipe: Simple, Delicious, and Always a Crowd-Pleaser

As a busy mom, finding quick and easy meals that the whole family enjoys is a constant quest. Let me tell you, this chicken kebab recipe has become a lifesaver! It's incredibly simple to make, requiring minimal prep time, yet delivers maximum flavor. Seriously, it's so good, my kids actually *ask* for it. And that, my friends, is a culinary miracle in itself.

I've experimented with different cooking methods – oven baking and BBQ grilling – and both turn out wonderfully. The oven method is perfect for a weeknight dinner when you don't want to mess with the grill. The BBQ option, however, adds a lovely smoky char that elevates the taste to another level. Whether you choose the oven or the grill, the result is consistently tender, juicy chicken with a beautiful blend of spices. The marinade is the real star here; it’s a magical combination of sweet and savory flavors that perfectly complements the chicken. I often make a double batch of the marinade, enough for leftovers the next day!

This recipe is incredibly versatile. Feel free to customize it to your liking. Swap out the chicken thighs for breasts if you prefer, although I find the thighs stay wonderfully moist. Experiment with different herbs and spices – a touch of cumin or coriander would be fantastic additions. The possibilities are endless! I often adapt the recipe based on what fresh herbs I have on hand. One time, I added some finely chopped fresh rosemary, and it was divine!

Beyond the ease and deliciousness, this recipe also offers a level of convenience that’s hard to beat. You can prep the chicken and marinade ahead of time, storing it in the refrigerator until you’re ready to cook. This is a game-changer for busy weeknights, allowing you to get dinner on the table quickly without sacrificing flavor. I often marinate the chicken overnight for a deeper flavor infusion.

The versatility extends to the serving suggestions as well. We love serving these kebabs in warm pita bread with a generous helping of our favorite salad and dipping sauces. But, feel free to get creative! They're equally delicious served with rice, couscous, or even a simple green salad.

This Chicken Kebab recipe is more than just a meal; it's a family favorite. It's a testament to the fact that simple, flavorful food doesn’t have to be complicated. It’s a recipe that brings joy to our family table, and I hope it brings joy to yours too. So give it a try. You won't regret it.
