Step-by-step

  • In a large skillet, melt butter and olive oil on medium-high heat.
  • Dredge chicken in seasoned flour and cook in butter/olive oil mixture until golden brown. About 5 minutes on each side. Remove from pan and set aside.
  • Reduce heat to medium; add mushrooms and garlic to pan. Sauté for a few minutes until mushrooms are slightly brown.
  • Add white wine and thyme, scraping up all the bits in the bottom of the pan.
  • Add chicken back to pan and simmer for about 15 minutes or until chicken is cooked through (165 degrees internally).
  • Remove chicken from pan. (This step is to easily whisk in the cream, Dijon, and cheese. If you don't mind stirring around the chicken, you can omit this step.)
  • Add cream, Asiago, Dijon, salt, and pepper to taste.
  • Add chicken back to pan. Heat and serve!

My Weeknight Go-To: Creamy Chicken and Mushroom Skillet

As a busy working mom, finding time to cook a delicious and satisfying dinner can feel like a marathon. Between school pick-ups, soccer practice, and endless piles of laundry, the thought of spending hours in the kitchen often sends me into a state of overwhelm. That's why I've developed a repertoire of quick, easy, and yet incredibly flavorful recipes that can be whipped up in under an hour. This Creamy Chicken and Mushroom Skillet is a perfect example. It’s become a family favorite, a true weeknight lifesaver, and a testament to the fact that even the simplest recipes can be extraordinary.

The beauty of this dish lies in its simplicity. There’s no complicated chopping or intricate techniques required – just a few readily available ingredients and a bit of simple cooking. The chicken breasts are seared to perfection, locking in their juices, while the mushrooms and garlic sauté beautifully in the pan, creating a fragrant base for the creamy sauce. The addition of white wine (or chicken broth for a non-alcoholic version) adds a subtle depth of flavor, complementing the earthy mushrooms and tender chicken. The creamy Asiago cheese finishes it off, adding a rich and luxurious touch that elevates the dish from simple comfort food to something truly special.

What sets this skillet apart from other chicken recipes is its versatility. Feel free to experiment with different types of mushrooms – cremini, shiitake, or even a mix – to add variety and depth of flavor. You can also easily adapt the seasonings to match your preferences. A dash of paprika, a sprinkle of oregano, or a pinch of red pepper flakes can all add a unique twist. I often adapt it based on what fresh herbs I have on hand from my little herb garden.

Beyond its deliciousness and ease of preparation, this recipe holds a special place in my heart because it’s a dish I can share with my family. It's a reminder that even amidst the chaos of daily life, we can still gather around the table, share a meal, and connect with each other. The aroma alone fills our home with warmth and a feeling of togetherness. The best part? There are almost always leftovers for lunch the next day! It's a win-win for everyone involved. This recipe is not only a quick and tasty weeknight solution but also a symbol of home, comfort, and togetherness.

Beyond the Skillet: Adapting the Recipe for Your Lifestyle

This Creamy Chicken and Mushroom Skillet is a blank canvas, easily adaptable to different lifestyles and dietary needs. For example:

  • Meal Prep Marvel: Double the recipe and store the leftovers in individual containers for quick lunches throughout the week. This is a huge time saver for busy schedules.
  • Healthier Swaps: Use skinless chicken breasts for a lower-fat option, and substitute full-fat cream with Greek yogurt or light cream for a lighter version. You can also reduce the amount of cheese.
  • Gluten-Free Goodness: Ensure your flour is gluten-free to make this recipe suitable for those with gluten sensitivities.
  • Vegetarian Twist: Omit the chicken and add extra vegetables such as spinach, zucchini, or bell peppers to create a hearty vegetarian option.

This versatile dish is more than just a recipe; it's a testament to the magic of simple ingredients brought together to create something delicious and satisfying. So, go ahead, try it out. It will surely become a staple in your own kitchen. It's perfect for busy weeknights when you need a comforting and satisfying meal without the fuss.
