Step-by-step

  1. Place the cake on a serving platter. Slice about 1-inch off the top of the cake and set aside.
  2. Hollow out the center portion of the cake, leaving the outer and inner walls, as well as about a 1-inch shell on the bottom. Reserve cake pieces and tear into 1-inch cubes.
  3. In a large bowl, beat the softened cream cheese until fluffy. Add Eagle Brand and lemon juice, beating until smooth. Stir in almond extract and food coloring until the desired color level is reached.
  4. Fold in 1 cup of whipped topping, then carefully stir in the reserved cake pieces and strawberries.
  5. Spoon the strawberry mixture into the hollowed-out cake; replace the cake top.
  6. Use the remaining whipped topping to frost the rest of the cake. Refrigerate for at least 3 hours or overnight.
  7. If you have any strawberries left over, remove the stems and add extra slices on top of the cake.

I've been baking for years, and this Strawberry Tunnel Cake is always a hit. It's perfect for any occasion, from birthday parties to family gatherings. The combination of fluffy cream cheese filling, juicy strawberries, and moist angel food cake base is irresistible. I love the way the strawberries peek out from the top of the cake, creating a beautiful presentation.

This cake is relatively easy to make, but it does require a bit of time and patience. The most important thing is to take your time and follow the instructions carefully. I recommend using fresh strawberries for the best flavor, but frozen strawberries will also work. You can also adjust the amount of food coloring you add to the cream cheese filling to achieve the desired color.
