Step-by-step

  • Preheat your oven to 180°C, and grease a 12 cup muffin tray with extra virgin olive oil/butter
  • Dice Pepperoni and place in a hot pan, cook for a minute or so or until fragrant
  • Add Spinach and Kale mix, and cook for 5 minutes or until Spinach and Kale has wilted. Remove from the heat and set aside
  • Crack the eggs into a bowl, mix lightly, add Mozzarella cheese, Sriracha Sauce and Salt and Pepper.
  • Add the Pepperoni, Kale and Spinach mix to the eggs
  • Spoon mixture into the muffin tray and ensure distributed evenly
  • Bake for 20 to 25 minutes, set aside to cool prior to removing from the muffin tray.
