Step-by-step

  • Put the butter, olive oil and cocoa powder into a microwave safe bowl and heat on high for 30-60 seconds.
  • Stir and mix every 30 seconds to melt the butter and all the ingredients are well combined to get a smooth chocolate mixture. Keep it aside.
  • In another bowl, whisk together the egg, granulated sugar and dark brown sugar till you get a uniform smooth mixture.
  • Pour in the chocolate mixture, vanilla and stir well to get a creamy smooth mixture.
  • In a large bowl, sift the flour along with the baking powder and salt.
  • Add the egg and chocolate mixture into this bowl and mix well with a spatula, until the flour is just well combined. Do not overmix.
  • Line a microwave safe glass container with parchment paper or grease it with cooking spray.
  • Pour the batter into the pan, spread it put evenly, and scatter the chocolate chips on top.
  • Place the container inside the microwave and cook for 2 minutes or longer depending on the power of the microwave.
  • Do not overcook, else the brownie will harden on cooling and may also burn. I have a 900 watt power microwave and it took 2 minutes to cook the brownie.
  • Its advisable to check the doneness of the brownie every 30 seconds after 2 minutes cook time.
  • Insert a toothpick and if it comes out clean, then the brownie is done.
  • Remove the glass pan from the microwave and let it cool for 5 minutes before cutting and eating.
Microwave Chocolate Brownies: A Busy Mom's Sweet Escape

Microwave Chocolate Brownies: A Busy Mom's Sweet Escape

Life as a mom is a whirlwind. Between school runs, work deadlines, and keeping the little ones entertained, finding time for myself feels like a luxury. But even the busiest of moms deserve a little indulgence, and sometimes, that indulgence comes in the form of a warm, gooey chocolate brownie. Forget spending hours in the kitchen – this microwave chocolate brownie recipe is my secret weapon for satisfying that sweet craving without sacrificing precious time. It’s quick, easy, and the results are surprisingly decadent. Seriously, you wouldn't believe these are made in the microwave!

This recipe is perfect for those nights when you're craving something sweet but don't have the energy (or the time!) for a complicated baking project. The ingredients are simple, things I usually have on hand. I often swap out the chocolate chips based on what I have – milk chocolate, dark chocolate, even white chocolate works wonders. The best part? The cleanup is minimal. One bowl, a quick wipe-down of the microwave, and you’re done! The entire process, from start to finish, takes less than 15 minutes, making it ideal for a quick after-dinner treat or a satisfying midday pick-me-up. My kids love helping me make these too, especially the part where we get to sprinkle the chocolate chips on top! It’s a fun, quick activity that we can do together, and it gives me a few extra minutes to connect with them while we bake.

Beyond the Brownie: A Moment of Calm in the Chaos

For me, making these brownies isn’t just about the delicious result; it’s about creating a small pocket of calm amidst the daily chaos. The rhythmic stirring, the anticipation as the brownie cooks, the warm, chocolatey scent filling the kitchen—these small moments create a sense of peace and contentment. It's a mindful activity that helps me unwind and connect with myself, even if just for a few minutes. It’s my way of recharging my batteries before diving back into the endless to-do list. And let's be honest, the taste of that warm, melted chocolate is pure bliss. It’s a little moment of self-care that makes a big difference in my overall well-being. Sometimes, the simplest pleasures are the most rewarding.

Tips and Variations:

Experiment with different chocolate chips: Use milk chocolate, dark chocolate, white chocolate, or even a mix of your favorites.

Add nuts: Chopped walnuts, pecans, or almonds would add a delicious crunch.

Spice it up: A pinch of cinnamon or cayenne pepper can add a unique twist.

Make it gluten-free: Substitute the all-purpose flour with your favorite gluten-free blend.

So, the next time you're feeling overwhelmed, stressed, or simply in need of a little chocolate therapy, give this microwave brownie recipe a try. It's the perfect way to steal a few moments of calm and enjoy a truly delicious treat. Believe me, you deserve it.
