  • Preparing Time: 15 minutes
  • Total Time: 30 minutes
  • Served Person: 11

Step-by-step

  • Preheat oven to 350 degrees F (176 C), and lightly grease a 12-slot standard size muffin pan (not mini).
  • Make sure you've rinsed and thoroughly drained your black beans at this point.
  • Prepare flax eggs by combining flax and water in the bowl of the food processor. Pulse a couple times and then let rest for a few minutes.
  • Add remaining ingredients (besides pecans, date caramel, coconut and chocolate chips) and puree - about 1-2 minutes - scraping down sides as needed. You want it pretty smooth.
  • Add pecans, coconut and chocolate chips and pulse to combine.
  • Add the batter to the prepared muffin tin (mine only filled 11) and smooth the tops with a spoon or your finger.
  • Then add 1 tsp date caramel to each brownie and carefully swirl with a toothpick or knife.
  • Top with remaining coconut, pecans, and chocolate chips.
  • Then bake for 25-30 minutes or until the tops are dry and the edges start to pull away from the sides of the tin. I found mine took about 29 minutes.
  • Remove from oven and let cool for 20-30 minutes before removing from pan. They will be tender, so gently run a knife around the sides, and then lift out with a fork.
  • The insides are meant to be fudgy, so don't be concerned if they seem too moist.
  • Enjoy with additional date caramel (optional, if desired). They would also be delicious with Coconut Whipped Cream, or Vanilla Bean Coconut Ice Cream!
  • Store completely cooled leftovers in an airtight container for up to a few days. Will keep in the freezer up to 1 month.

My Unexpectedly Delicious Gluten-Free Brownie Adventure

As a busy working mom, time is my most precious commodity. Finding healthy and delicious desserts that don't require a culinary degree or hours in the kitchen is a constant quest. So, when I stumbled upon this recipe for refined-sugar-free turtle brownies, I was intrigued, to say the least. Black beans in brownies? Naturally sweetened? Gluten-free? My skepticism quickly turned to excitement as I dove headfirst into this surprisingly simple recipe. What started as a mid-week baking experiment transformed into a family favorite, and I’m eager to share my experience and the recipe's magic with you.

The initial process was a breeze. The recipe cleverly uses a food processor to create a smooth, decadent batter. The combination of black beans (who knew?), cocoa powder, and maple syrup resulted in a fudgy texture that honestly surprised even me. I usually avoid recipes that tout themselves as "healthy" because they often fall short in the taste department. This was different. These brownies were intensely rich and satisfying – a far cry from the dry, cardboard-like "healthy" brownies I've encountered in the past. The addition of the date caramel swirl was a stroke of genius. It provided a delightful contrast in texture and a touch of unexpected sweetness that elevated the brownies from good to extraordinary. The pecans and coconut added a satisfying crunch, and the vegan chocolate chips added a rich chocolaty flavour that perfectly complements the other ingredients.

The baking process was straightforward, and the brownies emerged from the oven with beautifully cracked tops, a sure sign of fudgy perfection. The slight moistness inside did make me pause initially, but I quickly realized it was a testament to the brownies' rich, intensely chocolatey nature. Letting them cool completely was key; this allowed the brownies to firm up slightly, making them easy to handle and serve. These brownies have become a staple at my house. I pack them for lunchboxes (they're an excellent source of protein, I tell the kids!). They are the perfect treat after a long day. They're also amazing when paired with a scoop of coconut whipped cream, which adds another layer of decadence.

Beyond the Baking: A Reflection on Time and Taste

This recipe isn't just about delicious brownies; it's about reclaiming time in my busy life. It's a reminder that healthy eating doesn't have to be complicated or time-consuming. Often, the simplest recipes yield the most satisfying results, both in terms of taste and the feeling of accomplishment that comes from creating something delicious from scratch. This recipe has become a symbol of that for me – a little slice of joy amid the chaos of daily life. It's a testament to the power of simple ingredients combined with a touch of creativity to produce something truly extraordinary.

The best part? I've successfully converted even my most skeptical family members into fans. My husband, who usually avoids anything remotely "healthy," raves about these brownies. My kids, who often turn their noses up at anything green or remotely resembling vegetables, ask for them regularly. And that, my friends, is the ultimate compliment.

So, if you're looking for a guilt-free dessert that's quick to make, utterly delicious, and surprisingly healthy, give these refined-sugar-free turtle brownies a try. You won't regret it. And if you're like me, a busy woman with limited time but a desire for delicious treats, you'll find yourself adding this recipe to your weekly rotation, perhaps discovering a newfound appreciation for black beans along the way!
