Step-by-step

  • Into your beef, add coriander powder, cumin powder, cayenne pepper, salt along with the onion, ginger and garlic paste, mint, coriander and green chilli paste.
  • Be sure to squeeze the onions in your hands to drain its juice otherwise there will too much moisture in your beef and they won't stick to the skewer.
  • Mix with hand until everything is incorporated but don't overwork it.
  • Cover with foil and let marinate in refrigerator for at least two hours and up to six hours.
  • While kebab is marinating, make yogurt raita. Grind 2 tbsp each of mint and coriander along with the green chilli in an electric grinder with a touch of water to make a paste.
  • Pour this paste into the yogurt.
  • Add water to get the desired consistency. If you like the raita more liquidy, add more water.
  • Season with salt and keep aside.
  • To make the kebabs, preheat your oven to 475 degrees F.
  • Scoop out a big ball of the meat mixture and pierce it through the skewer.
  • Working quickly but gently, spread the meat on the skewer with your hands.
  • Press you middle finger in a diagonal angle down the beef skewer to make the signature grooves on the kebab.
  • To grill the kebabs in the oven, place the rack in the upper third of the oven.
  • Brush the grill with some oil to prevent the kebabs from sticking.
  • Place a piece of tin foil at the bottom grill so that the drippings from the meat can catch on the foil.
  • Bake kebabs for 20-25 minutes, rotating as needed to brown the kebabs all around.
  • If you find that your kebabs are getting dry, brush oil as needed. However, I don't think you will need to add oil because unlike the heat from an outdoor grill, the oven keeps the kebabs cooking in its own juices.
  • Once cooked, slide of the kebabs onto a plate and serve with raita and pita bread.
  • This makes 6 really big kebabs.

A Taste of Home: My Pakistani Seekh Kebab Adventure

The aroma of sizzling seekh kebabs always takes me back to my childhood. Growing up in a bustling Pakistani household, the scent of spices blending with the smoky char of grilled meat was a constant, comforting presence. The Magic of the Marinade The heart of a truly exceptional seekh kebab lies in its marinade. The blend of aromatic spices - coriander, cumin, cayenne pepper - dances with the ginger and garlic, creating a symphony of flavors that permeates the tender beef. I've always found that squeezing the onions to remove excess moisture is key to achieving kebabs that hold their shape beautifully on the skewer. The marinade, a vibrant tapestry of herbs and spices, transforms ordinary ground beef into something extraordinary. It's a testament to the power of simple ingredients, expertly combined. The process of preparing the marinade is an act of love, a dedication to creating a dish that is both delicious and deeply personal. As the beef rests in the marinade, the flavors meld and deepen, promising a culinary experience that is both familiar and exciting. It's a promise kept with every succulent bite of this classic dish.

The Cooling Comfort of Raita No Pakistani meal is complete without a refreshing side dish, and for seekh kebabs, nothing complements their smoky richness quite like yogurt raita. The creamy coolness of the yogurt provides a perfect counterpoint to the spicy heat of the kebabs, creating a harmonious balance of flavors. The simple addition of finely chopped mint and coriander, along with a touch of green chili, elevates the raita from a simple yogurt dip to a culinary masterpiece. It's a dish that is as versatile as it is delicious – a blank canvas that can be customized to personal preferences. Whether you prefer it thick and creamy or light and tangy, the raita offers a soothing respite from the boldness of the kebabs, ensuring a delightful and satisfying culinary experience.

More Than Just a Meal Preparing these kebabs isn’t simply about following a recipe; it’s about capturing a feeling, a memory, a piece of my cultural heritage. Each step, from meticulously chopping the herbs to carefully assembling the kebabs, is a reflection of the dedication and love that I pour into my cooking.
