Step-by-step

  • Mix the coconut flour, parmesan, parsley, garlic powder, salt and baking powder in a bowl.
  • Then add the egg, olive oil and whipping cream and give it all a good mix.
  • Microwave the mixture for 2-3 minutes till it's fully cooked.
  • Remove from the bowl and set aside to cool. I would recommend drying it out in the oven for about 10 minutes at the lowest temperature.
  • Once it's properly cooled down then blitz it in the food processor to form a breadcrumb.
  • Take the veal meat and using cling film and a meat mallet bash it to form a thin cutlet. Make sure it's extremely thin as it will contract and get thicker when it cooks.
  • Season the veal with salt and pepper on each side. You can also use any other seasoning you like. However since it's a very thin cutlet be careful not to over season it. Season very lightly.
  • Beat an egg and then dip the veal cutlets in the egg and then in the breadcrumbs.
  • You can either pan fry, shallow fry or deep fry these. You want to do it at a medium heat so as to get a nice colour on the breadcrumbs but not burn them. The meat, because it's lean veal and beaten quite thin, will cook very quickly. So about 3-4 minutes on each side should be enough.
  • Serve with a slice of lemon. Enjoy with a nice refreshing salad on the side.

My Keto Wiener Schnitzel Adventure: A Busy Mom's Quick & Easy Recipe

Life as a working mom is a whirlwind of school runs, work deadlines, and the ever-present challenge of keeping the family fed with healthy, delicious meals. Finding time to cook elaborate dinners is often a luxury I can't afford. That's why I've become a huge fan of quick, easy, and delicious recipes – especially those that fit my ketogenic lifestyle. This Keto Wiener Schnitzel recipe is a perfect example: it's elegant enough for a special occasion, yet simple enough for a weeknight dinner. The crispy, flavorful coating and tender veal make it a family favorite, and the low-carb nature keeps me on track with my health goals.

The beauty of this recipe lies in its simplicity. It doesn't require a mountain of exotic ingredients or hours of slaving over a hot stove. The preparation is straightforward, and the cooking time is surprisingly short. I often find myself making a double batch because it’s that good, and the leftovers are just as enjoyable the next day. I usually serve mine with a vibrant green salad for a balanced and satisfying meal. Sometimes, I'll add a side of roasted vegetables for extra flavor and nutrients. The versatility of this dish allows me to adapt it to whatever fresh ingredients I have on hand, making it a perfect staple in my busy kitchen.

The secret to perfectly crispy Keto breadcrumbs? Don't rush the process! Allowing the coconut flour mixture to cool and dry thoroughly before blitzing it in the food processor is crucial for achieving that perfect, golden-brown crust. I've experimented with different methods, and this one has consistently yielded the best results. Using a food processor ensures a fine crumb consistency, resulting in even, crispy coating on each veal cutlet.

Tips for Success:

  • Thinly pounded veal: The thinner the cutlets, the faster they cook and the crispier they become. Invest in a good quality meat mallet for even pounding.
  • Don't overcrowd the pan: Ensure there's enough space between the cutlets when frying to allow for even browning and prevent steaming.
  • Adjust the seasoning: Feel free to experiment with other herbs and spices to suit your taste. A sprinkle of paprika or Italian seasoning can add an extra dimension of flavor.
  • Serve it up!: Serve your Keto Wiener Schnitzel immediately after cooking to enjoy its optimal crispiness. A simple side salad or steamed asparagus is a perfect complement.

This recipe has become more than just a meal; it's a testament to the fact that healthy eating doesn't have to be boring or time-consuming. It's a delicious reminder that even amidst a busy schedule, we can nourish our bodies and our families with flavorful, satisfying food that aligns with our lifestyle goals. So, grab your ingredients, put on some music, and enjoy the process of creating this quick, easy, and oh-so-delicious Keto Wiener Schnitzel. You won't regret it!
