Step-by-step

  • Lay out a piece of parchment paper, or waxed paper, or foil.
  • Chop the chocolate into small pieces and put in a microwave safe glass measuring cup.
  • Microwave for 60 seconds, and then stir.
  • Microwave for another 30 seconds, and then stir again to completely melt the chocolate.
  • If there are still lumps, microwave for another short burst and stir again.
  • Use a spoon to make small rounds of chocolate onto the parchment paper.
  • Let the chocolate fall from the spoon and it will naturally form a more or less round shape. You can nudge it with your spoon if you like.
  • Work with one at a time, and sprinkle each round of chocolate with an assortment of your healthy add-ins while the chocolate is still hot.
  • Make them whatever size you like, but mine were about 2 to 2 1/2 inches in diameter.
  • Let the chocolate set at room temperature, or put the bites in the refrigerator to speed things up. If you plan to refrigerate the medallions it helps to put the parchment right on a baking sheet or tray so you can transfer it straight to the fridge.

My Dark Chocolate Super Bites Adventure: A Busy Mom's Sweet Treat

Life as a working mom is a whirlwind. Between juggling work deadlines, school pick-ups, dinner prep, and the never-ending laundry pile, finding time for myself feels like a luxury. But even amidst the chaos, I need moments of calm, and for me, that often comes in the form of a small, delicious treat. This is where my Dark Chocolate Super Bites come in. They're quick, easy, and incredibly satisfying. They're not just a dessert; they're a little slice of self-care I can fit into even the busiest of days.

The beauty of this recipe is its simplicity and adaptability. I started with a simple dark chocolate base – the richer, the better! – and then I got creative with the add-ins. One day, it might be a mix of crunchy nuts and tart cranberries; another day, it could be a medley of chewy dried apricots and sunflower seeds. The possibilities are endless, which is perfect for a busy week when you want variety without the hassle. Honestly, I often find myself raiding my pantry for whatever dried fruits or nuts I can find; it's the perfect way to use up those little bits and bobs that otherwise get lost at the back of the cupboard.

The process itself is incredibly straightforward. Melting the chocolate is a breeze, even if you’re not a culinary whiz. And then, it's all about the fun part: creating little chocolate masterpieces by adding your chosen mix-ins. This is a perfect activity to do with kids; my daughter loves to help, and it's a great way to introduce her to different healthy snacks in a fun and engaging way. It’s like a tiny, delicious craft project, with a reward that’s both incredibly tasty and deeply satisfying.

What I love most about these chocolate bites, aside from their amazing taste, is their versatility. They're perfect for an afternoon pick-me-up when energy levels are waning, a delightful treat after a particularly stressful day, or even a sophisticated addition to a small gathering with friends. They can be stored in the fridge for a few days, making them a convenient and delicious option to have on hand when the urge for something sweet hits. They’re a wonderful reminder that even amid the chaos of daily life, a little bit of sweetness, a touch of self-indulgence, can go a long way towards making you feel centered and refreshed.

Ingredients: The ingredient list couldn’t be simpler: good quality dark chocolate (the higher percentage of cocoa the better, in my opinion!), a selection of your favorite dried fruits (I love cranberries, apricots, and raisins), chopped nuts (almonds, pecans, walnuts – take your pick!), and a variety of seeds (pumpkin, sunflower – again, anything goes!).

Beyond the Recipe: This isn't just a recipe; it's a mindset. It’s a reminder to take those small moments of self-care, however small they might seem. It's a testament to the fact that even the busiest of schedules can accommodate a little bit of indulgence, and that self-care doesn't have to be complicated to be effective. These dark chocolate super bites are more than just a treat – they're a symbol of self-compassion and a little reminder that amidst the busy life of a working mom, I deserve a little something sweet.

So, take a deep breath, melt that chocolate, and create your own little pieces of delicious self-care. You deserve it.
