Step-by-step

  • Season both sides of the meat with the ground ginger, salt, and pepper.
  • In a large cast iron skillet or dutch oven over medium-high heat, add the oil and brown the roast on both sides (this gives the broth/gravy a better flavor).
  • Add 2 cups of water (or enough water to reach 3/4 of the way up the side of the roast).
  • Cover and reduce the heat to low.
  • Simmer for 1 hour.
  • In a small mixing bowl, add the Lipton soup mix and the jar of mushroom gravy; mix well and set aside.
  • When the roast has simmered for one hour, add the vegetables and the gravy mixture; cover and simmer for another 30 - 45 minutes or until the vegetables are fork tender.
  • Pressure Cooker: Using the pan of the pressure cooker, follow the recipe through the browning of the meat. Toss in the remaining ingredients. Cover and make sure the vent is set to closed. Press the Meat/Chicken button and the Time Adjust button to get a total time of 1 hour on high heat. When the timer goes off, press the cancel button to clear the warming mode. Do Not Release the pressure! Press the Meat/Chicken button once to get a total of 15 minutes more. When time is complete, release the pressure. If the gravy is not thick enough for you, add a slurry of water and cornstarch and cook for a few minutes on high. Serve hot.
  • Crock Pot or HotLogic Cooker: Follow the recipe through the browning of the meat. Toss everything into the cooker and cook on low for 8 hours.
